 Physico - Chemical analyses of semi-finished, finished cocoa products and other raw
materials including determination of moisture, ash. Finesse (residue), Free fatty acid,
sugar, fat and pH
 Microbiological analyses of semi-finished and finished cocoa products including
Total Plate Count, Yeast and Molds and Coliforms.
 Microbiological media preparation.
 Assessing quality of Raw Cocoa Beans
 Liaising with Quality control Division for fogging and fumigation when necessary.
 Inspecting incoming raw materials and packaging materials to ensure conformance to
specification.
