Other specialty yeast includes nucleotides, minerals, and vitamins. Supplement yeast plays the
essential role of providing nutrients such as folic acid, vitamins, and minerals to both human and
livestock. Yeast products possess functional properties, and also contain physical properties that
ease their incorporation into products and the formation of aqueous solutions. They improve the
human immune system, reduce cholesterol, and have anti-carcinogenic properties. Mannan-Oligo-
Saccharide (MOS), a constituent of yeast cell wall, prevents diarrhoea in swine during weaning.
Further, it serves as a probiotic element for the health of the bacteria present in the gut and colon.
The growing demand for health foods and nutritional diets has enhanced the growth and importance
of other specialty yeast.
