5. Rules for Writing Recipes
Write step-by-step directions explaining how to put the recipe together and
in what order, how to cook ingredients to create the dish and , often, how to
serve.
Use a bullet to indicate each step, and describe one procedure per step.
Use sequence words (first, then, after, next , etc.) to show the directions in
order
Learn to use some common cooking verbs : whisk, pour, dip and coat,
grease, dice, cut up, soften crack, melt, mash, boil, etc.
Note: Imperative sentence must be used while writing procedure
6. • Boil water and cook the noodles
according to instructions on the package.
Reserve noodles when ready.
• Meanwhile, cut chicken breasts into
small slices.
• Heat oil in a pan, season chicken with
salt and cumin powder, and fry until the
chicken is browned. Set aside.
• Wash and cut garlic, ginger, hot chilies,
onions, capsicums, carrots, and
cabbage.
• Heat oil in a large wok (or skillet) over
high heat. Add garlic, stir-fry for 30 sec
before adding ginger. Stir-fry ginger for 30
sec.
• Add 3 tablespoons of tomato ketchup.
Lower the heat and stir the mix for
another 1 min.
• Add onions, green chilies, carrots,
capsicums and cabbage.
• Add soya sauce. Mix thoroughly. Do not
over-cook.
• Add noodles. Mix until combined. Season
with black pepper and coriander ground.
• Turn off the heat. Top the Chow Mein with
the chicken and garnish with fresh
coriander.
Preparation
a. 225g dried or fresh egg noodles
b. 1 tbsp sesame oil, plus 1 tsp
c. 100g boneless, skinless chicken
breasts, cut into fine shreds
d. 2½ tbsp groundnut oil
e. 2 garlic cloves, finely chopped
f. 50g mangetout, finely shredded
g. 50g cooked ham, finely shredded
h. 2 tsp light soy sauce
i. 2 tsp dark soy sauce
j. 1 tbsp dry sherry
k. ½ tsp freshly ground white pepper
l. ½ tsp golden caster sugar
m. 2 spring onions, finely chopped
