1. Scotch Eggs

6 hard cooked eggs, peeled
1 1/2 pounds tube pork sausage - any flavor
1 cup of flour
1/8 teaspoon salt
1/8 teaspoon ground black pepper
2 raw eggs
1 cup of dry bread crumbs
6 cups oil for deep frying
Pour oil into deep pan and heat to 350 degrees.
Pour the cup of flour in a bowl. Mix in the salt and pepper.
Crack raw eggs in another bowl and whisk to mix.
Pour the bread crumbs in another bowl.
Cut the sausage into 6 equal pieces.
Place one piece at a time in the palm of your hand and mash it flat.
Place a peeled, boiled egg in the center of the sausage.
Mold the sausage around the egg.
Make sure the egg is well covered.
When the oil is heated, dust the sausage egg with flour.
Dip the sausage egg into the egg wash and then roll it in the bread crumbs.
Fry about 4-5 minutes. Place on paper towels to drain.
