Module Introduction.
Module Name & Code:
– Food Science and Microbiology – FDS2040M
• Module Tutors:
– Pauline Lovatt and Yunus Khatri
• Aims and learning outcomes of the module.
– Undertake nutritional analysis of a food product;
– Review the function of additives and preservatives used within food
products;
– Evaluate the relationship between microbiological control and hygienic
design of food premises;
– Evaluate a food product to determine the factors which affect its shelf
life and generate a microbiological specification for a chosen food
product;
– Assess rapid microbiological methods used within the food industry.
• Module duration
– 11 weeks starting from 8th April 2013 to 17th June 2013
– Some assessments will may be handed in after the module is completed

3. Module Introduction
• Assessments linked to the Module:
– Types of assessment/tests
• Laboratory/Scientific Reports: Hygiene Assessment and FAMES
• Phase Test – 1.5 hours, conducted on site at the Holbeach Campus. The
phase test will be conducted in examination conditions,
– Number of assessments/tests can be seen on following slides;
– “Pass” Requirements.
• An overall grade of 40% is required to pass this module
– Foundation Degree Students: This is a level 2 module, resits are allowed but
capped at 40 %. You will not be entitled to retake the module. If you fail the resit
you fail your programme as with all level 2 modules for the Foundation Degree.

6. Hand-In Dates
• Work must be submitted through blackboard
by midnight on the hand-in date.
Examinations will take place at the Holbeach
Campus.
• Extensions must be requested directly to the
“Course Leader” Pauline Lovatt or Yunus
Khatri for Food Manufacture before the
hand-in date.
• Extensions if granted, will only be granted for
an additional week.

7. Late Submission Loss of Marks.
• Work submitted late without an extension
has to be subject to marks being
deducted.
• 10% of marks will be deducted for every
day the assignment is late without
notification
