In fact all the typical wheat
grains such as Capelli, Simeto,
Svevo, Arcangelo, Duro Lucano,
Quadrato and Kronos, are
locally cultivated in small
agricultural farms. These are
transformed Into flour in the
small mill CAMEMA situated in
the famous town of Altamura and
used by us in our different
products. The most famous grain
is the “Senator Cappelli”,
cultivated to a superior level of
purity and used in our pasta.
technical traditions:
We use only bronze draw-plate and the process involves a drying process of 38
to 40 degrees. The result is a superior exceptional product, with an intensely
marked fragrance and perfume which increases during the cooking process.
The finished product is of great density and taste able to heighten the
seasoning used.

4. The special rainbow
During the night our maker of
pasta works in purity the
Altamura semolina with a purified
water and our dust vegetables.
The final result is a monochromatic
and a mono taste roll used during
the day to create the wished
design…..
…..then, these rolls are stretched
out on the worktop and overlapped
in the established order to achieve
the mixed combinations and final
design.
The multicolour roll will be cut into
strips, and will transform into a
“rainbow cloth”.

5. Antonio Marella's advices
"Our hand made pasta will
have different cooking times
depending on the flame used
and above all depending on
hardness of water,so, even If
there are cooking times
mentioned on your package,
please do not forget the pasta
while it is cooking. In fact,
half way through the cooking
process, add the drained pasta
In your seasoning and finish
there the cooking process. In
this way the starch won't be
lost In the water , but will be
useful to emphasize all the
flavours. The final result is a
taste that can never be
achieved by an industrial
pasta but only thanks to our
carefully and delicate made
product."
