UNIT 1
LESSON 1:
Housekeeping a short course that is being offered by TESDA which will
train you in preparing guest rooms, cleaning premises and equipment, washing
linen and guest clothes, providing housekeeping services and providing valet
services to hotels, motels, clubs, hospitals, resorts, dormitories and luxury
liners. Completing this short course will grant you the title of being a
professional housekeeper. It is different from being ordinary Cleaning services
because you will get a privilege to work abroad.
COOKERY is an art and science of preparing food
for consumption by using heat. Cookery is an age- old
practice.
The simplest method of cooking was holding a piece
of meat or vegetables in the fire directly, which is still in
practice, with a little sophistication. From the age-old
cooking practices to cooking for fine dinning, cookery has
come a long way with the evolution of humans, their skills,
diverse cultures, and the equipment.

KITCHEN DEPARTMENT
It is important for any kitchen staff to first and
foremost, understand the workplace. As a kitchen staff, you
should familiar with the organizational structure of the
kitchen hierarchy so that you will know who’s in charge and
who to report to.
it is also very important to be familiar with the different
positions and its responsibilities inside the kitchen
department to have an efficiency at work.

Organizational Structure in the
KITCHEN
The kitchen is organized in such a way that each and
every staff is assigned roles and allocated tasks for
maximum efficiency. The kitchen is organized depending on
various factors; it can depend on the nature of the dishes
being served in the menu, the type of establishment , the
demand and size of the customers, or through the physical
space and resources available,

Main Cook. Overall management of kitchen and staff, supervising, creating new
recipes & training apprentice.
Chef de Cuisine
Deputy Cook. Takes charge in the absence of executive cook.

In charge of the butcher shop. They prepare meats, fish, & poultry.
Butcher Chef
Prepares all cold savory food such as appetizer, salad, sandwiches & pates.
Chef Garde Manger

Responsible for both hot & cold dessert including cakes, pastry, ice creams, and
creams. They are separate from the main kitchen.
Pastry Chef
Also known as soup cooks. They are responsible in preparing soups and stock.
Boulangers

enrolling in this course:

Also known as vegetable cooks. They are responsible in preparing vegetables,
potato, egg dishes.
Entremetier
Also known as fish cooks. They are responsible in preparing all fish courses.
Poissonier

They are responsible in preparing all sauces & sauce related dishes.
Saucier
Also known as roasting cooks. They are responsible in preparing braised and
roasted meats, and most meat dishes, including deep- fried food.
Chef Rotisseur

enrolling in this course:

Also known as grill cooks or chef grillardin.
Savoury Cook
Responsible in preparing food for banquet functions and buffet.
Banquet Chefs

Has skills and knowledge of every section. Takes charge as and when required.
Chef Tournant
is a chef in charge of a particular area of production in a restaurant
Chef de Partie

Demi Chef de Partie
They assist the chef de parties or any section chef. They are divided
into Commis I & Commis II.

OJT or on the job training will let you familiarize yourself
with the function of each staff or each department and the
processes inside the organization through hands-on work
experience. OJTs can be required for interns or new staff and
even to old staff members if a new policy or system is being
implemented.

These are set of instructions that indicate the appropriate
actions to be undertaken for any possible workplace situation.
SOPs may be set by the establishment, the industry, and
sometimes by a concerned government agency.

As a kitchen staff, it is your responsibility to complete
the task that is being assigned to you. One of your primary
duties is to always keep the kitchen clean. Every kitchen
maintains a hygiene and sanitation standard to ensure the
health and safety of the employees and customers.
