“Chef’s Innovative New Menu”

The Charnwood in Blyth can offer some of
the best dining in the area thanks to head
chef, Billy Frost.
Billy Frost was apprenticed at the famous Ritz Hotel in
London before arriving in Blyth as sous chef a year ago
thanks to his innovative menu ideas.
“Billy is a phenomenal chef - he blows you away. His
presentation of food is amazing and he has really
captured the idea of using fresh ingredients. He does
things properly and he’s innovative - he comes up with
all the menu concepts himself and they’re always
great,” says general manager Mark Tulett, himself a
trained chef.
It’s a different environment to the Ritz but I wanted a
bigger challenge,” explains Billy who even bakes his
own bread daily.
“We use a lot more home-made food now - nothing is
packaged or frozen. It’s what the customers want, there
is more skill involved and it is more complex.
For the themed menus, we try and match the food to
the occasion - for Halloween, for example, I’m doing
tequila chicken roasted ‘bat wings’.”
The Charnwood retains its popular pub classics menu,
with options such as pies and fish and chips, and also
has a sophisticated main dining menu. “We’ve already
stepped up the specials board - cod loin, scallops, duck
breast.”
All ingredients arrive fresh from local suppliers, from
fruit and vegetables to meat and fish. Billy highlights
his favourite starter mussels, main course as braised
beef with sticky red cabbage and chocolate delice for
dessert.
“Lots of classics are popular, like the pies and pub grub.
The braised beef and belly pork are both big sellers.”
“I think it’s our seasonality that makes us different to
others, and keeping the classics but putting a twist on
them.”
The food is a big draw for the Charnwood’s popular live
music nights, which feature top Professional tribute acts.
A three-course meal is included in the tickets price and
there is a disco until 1am.
Coming up for Christmas this year is Cliff Richard, Cher,
Slade and Mrs Browns Boys tribute acts. New for 2015
Jersey Boys, 4 tops, The Supremes, stylistics and comedy
club nights
Sunday lunch is also available and the new menu is
now up and running.
