The Florida and Arizona studies both found positive changes in immune system cells. For example, the Florida study found an increase in gamma delta T cells – these cells play a role in protecting the body from microbes. Vanderbilt, Tokyo, Australia and Foggia, Italy all reported reduction in homocysteine, an indicator of suboptimal nutrition status associated with risk for diminished vascular health.
