filled with friends and family, celebrating old traditions, creating

Serves 10 – Recipe may be cut in half
Ingredients:
• 3-1/2 lbs carrots, peeled
• 6 eggs
• 1-1/2 cups Sugar
• 1T Baking Powder
• 1T Vanilla
• ¼ cup flour, may use cornstarch for gluten free recipe
• ½ lb butter, softened
• Powdered Sugar
1) Steam or Boil carrots until soft and Drain Well.
2) While carrots are warm, add Sugar, Baking Powder, and Vanilla
3) Whip with Mixer until smooth
4) Add Flour or cornstarch and Mix Well
5) Whip Eggs separately and add to Mixture and Blend Well.
6) Add Softened Butter to Mixture and Blend Well.
7) Pour into greased Baking Dish about ½ full (It will rise
when baking)
8) Bake in Pre-Heated 350 degrees Oven, about 1 Hour. Top will be
Golden Brown
9) Sprinkle with Powdered Sugar before serving

Who Is The Man
House Of Lights?
Wade Verges is the man with the house of lights, Christmas
lights, that is! At 72, he is enjoying the rewards of his hard work
and giving back to his community in many ways. Here in Lake
Vista, neighbors enjoy the fabulous Christmas lights display he
puts on every year on Robert E. Lee Boulevard. It is a big display
and it is full of fun, as is he! His eyes twinkle as he talks about
his love of Christmas.
Trained as an architect at Tulane University and the University of
Washington, Wade moved into the high-risk game of real estate
development, and won! Years of buying buildings, designing, ren-
ovating, and selling, along with much hard work have put him in
the sweet spot where he is able to contribute to the community.
Even in the earlier years, he was thinking of others, specifically
those with disabilities, when he bought a building and created a
home for them. A caring staff was added and the home pros-
pered. As times changed, this endeavor evolved into a number
of group homes in New Orleans East housing eighty individuals
with a staff of eighty. Hurricane Katrina’s arrival caused them to
evacuate to northern Louisiana and the destruction was too great
for them to return to the homes. After years of working with in-
surance companies, settlements were reached and the Davis-Mol-
ony Fund was born. The Board of this fund now gives generously
to as many as 40 organizations throughout the New Orleans area
and abroad.
Beneficiaries are organizations such as Boys Hope Girls Hope, St.
Vincent de Paul which was a favorite of Wade’s father in law, and
Children’s Hospital. Another special recipient is Families Help-
ing Families where Wade was honored on October 6 this year for
many years of supporting families who have a Down’s Syndrome
child help those who are new to the club, one he knows personal-
ly. He honors veterans by giving to Operation Restored War-
rior and will host Raintree and Family Services in his home for
Christmas. He supports Religious of the Sacred Heart in a school
in Africa, the result of being seated next to one of the organizers
on a plane.
Wade enjoys his life! During his high school years, his father
gave him and his brother an old Dodge truck which they hand-
painted. It was an embarrassment to be seen in it, he says. That
lead to an appreciation of any nice car, so much so, that he began
to collect muscle cars: American sports cars with powerful
engines. The collection of twenty-four, down from a high of thir-
ty-five, is housed in a warehouse in the East where they receive
loving care. He also enjoys participating in the Mystick Krewe
of Louisianans- Washington D.C.’s Mardi Gras. As he looks at
the beautiful view of City Park out of his front window, he says
money doesn’t bring happiness, but giving to others does! He has
certainly earned that happiness!

Residents of Swan Street since 1991, the
Boudreauxs, J. Philip (Phil) and Deborah (Deb)
fell in love with Lake Vista for its peaceful
setting. As longtime Lake Vista residents, the
Boudreaux family describes Lake Pontchartrain
as their "weekend hangout." Their love of water
is apparent by the boats they own and the two
large saltwater aquariums in their living room.
There is no doubt that they are in the right place.
"We love to sail, fish and exercise on the lake.
The lakefront represents serenity to us. We can
walk out our back door, up the levee and enjoy
the peace of the lakefront (preferably with a
glass of wine in hand!)", Deb said.
Phil, a Professor of Surgical Oncology at LSU Health Sciences Center School
of Medicine, earned his undergraduate degree in Micro-Biology and Zoology
at LSU and his Doctorate in Medicine from LSUHSC. After completing his
medical internship at St. Jude's Children's Hospital, he continued at Char-
ity Hospital to complete his general surgery residency and completed his
fellowship in pediatric surgery at Pittsburgh Children's Hospital. While he
was finishing his next fellowship in organ transplantation at the University of
Minnesota, he met Deb who was teaching middle school physical education
and health and coaching gymnastics. Deb is an alumnus of the University of
Wisconsin – LaCrosse. After marrying, Phil and Deb moved to Galveston,
Texas where Phil performed the first pancreas – kidney transplant in the
state of Texas. In 1991, Phil and Deb moved to New Orleans to be closer to
Phil’s family. Truly a pioneer in the medical field, Phil also performed the
first pancreas-kidney transplant in the state of Louisiana!
After completing their home renovation in Lake Vista, Deb furthered her educa-
tion and attended Delgado Community College to earn her Associates Degree and
Certification in Interior Design. Now a co-owner of Le Boulevard Marketplace,
a shopping experience that includes art, photography, antiques, jewelry, collect-
ibles and home décor, she enjoys helping her customers with interior decorating.
Their son, Jacques (19) is a student at Embry Riddle Aeronautical University
in Daytona Beach, FL. Featured in a previous issue of The Vista when he was a
Ben Franklin Senior, Jacques enjoys flying, sail-
ing, skiing, fishing, hunting, fixing up his jeep and
spending time with friends. While working on his
degree in Flight Science with a minor in Drones,
Jacques is also working towards his commercial
pilot's license. Upon completing his single-engine
pilot's license, he was excited to take his father as
his first passenger in flight.
As a family, the Boudreauxs also enjoy cooking,
reading and spending time with family and friends.
“We also love to EAT in this city!” Deb told us. The
family's favorite restaurants in the Lakefront area
are El Gato Negro, Blue Crab, The Steak Knife,
Mondo and Ralph's On The Park. When cooking
at home, the Boudreauxs like to grill. The family
favorite is steak or shrimp kabobs with veggies on a
bed of rice with apple cobbler for dessert.
It is a tradition to celebrate Thanksgiving at home
and invite family, friends and LSU medical students
and residents that are not able to go home for this
holiday. "It's a houseful!!” Deb said, “Then for
Christmas, we make our way to the frozen tundra
– Minnesota - to enjoy time with family." Other than
visiting Deb's family in Minneapolis, the Boudreauxs
like to travel to North Haven, Maine for vacation.

tiful island. So when we need to get out of the New
Orleans' heat, we travel north. As a family, we love

When traveling outside the United States, their favorite designations are Ant-
werp, Belgium, Rouen, France, and Florence, Italy.
As a family, the Boudreauxs share the love of music and film. Deb and Phil's
movie favorites are anything science fiction and comedies although they both
confess they love all movies. Jacques' favorite movies are Aliens and Top Gun
(no surprise there!!). Deb also revealed to us that she loves Dancing with the
Stars as she and Phil both love to dance! The Boudreauxs love their New Orle-
ans Saints, Pelicans and LSU football games.
But all of this activity does not take them too far away from their beloved
community. Deb served as Past President and is a current member of Children's
Hospital Guild, Past President and current member of the LSUHSC Women's
Alliance and served as Past President of both the St. Paul's Episcopal School's
Board of Trustees and Parents Committee. She continues to serve on St.
Paul's Episcopal School Endowment Committee. Deb has served on the Grace
Lutheran Church Council as property and stewardship chair. Phil was the Past
President and is a current member of Louisiana Organ Procurement Agency
(LOPA) and is very supportive of Deb's community involvement.
“We LOVE the diversity of our neighbors and consider many like family! At the end
of the day, we feel very lucky to come home to such a beautiful place,” Deb said.

A Warm Home to Many
The Harveys home at 109 Lark St. has many people who enjoy its warmth.
These days it is home to Kim and Margarita as well as Margarita’s mother, Ma-
ria. Four sons and five grandchildren fill the home with even more joy during
visits. Weekly, twenty of Margarita’s piano students cross the threshold.
During lessons, parents and siblings enjoy the lovely screened porch overlook-
ing the parkway, decorated with whimsical touches.
Years earlier while living in Luling, Margarita and Kim Harvey decided to
renovate the home in Lake Vista where Kim had grown up and move into it.
When the slab was determined to be cracked,
plans changed to building a new house. After
many trips in from Luling, the Harveys moved
to the lot and for nine months lived in a FEMA
trailer there while the construction took place.
Margarita was determined to keep something of
the old. Today, a painting of the house sits above
the fireplace and preserved chandeliers hang in
the new house which was finished a year
after Katrina.

One look at the Zililich pets and you know they are special. “We
don’t have children with two legs but these two with four legs
have enriched our life so much we can’t imagine life without
them.”” says momma Kimberly. She is speaking of her West
Highland White Terrier, Layla May Zibilich and her Scottish Ter-
rier, Henry James Benson Bailey Zibilich! She is 13 and he is 7.
Both pets came from a breeder in DeRidder, LA. Nothing about
the breeder and location was terribly interesting except that papa
Keith flew his plane to pick up Henry. Keith was training to be a
pilot at the time and that trip was considered his cross-country
trip.
The Zibiliches have traveled in their plane on vacation putting
the dogs in the back seat and Henry loves it! He is very calm
and sleeps the entire flight. Kimberly thinks this is because he
flew at 9 weeks old. Layla, on the other hand, doesn’t like flying
as much as her brother. She, by the way, got her name from the
Eric Clapton hit song, Layla. Henry is named after Kimberly’s
grandfather. While Layla loves to watch tv, Henry is a social dog,
very vocal, speaking in his own language to everyone he meets,
dogs and people alike.
These very special companions are truly man’s best friend and
no matter how bad your day is, they are happy to see you. Why
wouldn’t they? They are so spoiled that Kimberly and Keith joke
that the sofas were purchased to make them happy!

Mr. Mark Bergeron

Mr. Mark Bergeron is the owner of New Orleans
Food and Spirits Restaurant. He opened up his
restaurant because he likes food, people and
used to work at his grandparents”restaurant. It
has been open for 21 years! His restaurant has
three locations: Harvey, Bucktown and downtown
Covington. Mr. Mark came up with some of
the items on the menu from his grandparents’
restaurant, and others he created himself. Some
of his favorite items on the menu are voodoo rolls,
salads, and grilled fish. He also offers take-out
and catering. He recently put an outside closed in
patio with a fountain and bar in the courtyard. It
is very nice! My family sometimes dines there for
lunch because it is casual and we can get seafood
or oysters. He loves being in the restaurant
business and enjoys dining there himself.
Mr. Mark and his family have lived in Lake Vista for thirteen
years. Besides the restaurant, he loves being on the water in his
boats with his family, wife Chi and their three kids Marky, Grace
and Ben, and dogs. When Mr. Mark needs a little R&R from the
restaurant business, he heads to his other house in Florida by
the beach. Lastly, he always says he is living the dream. And I
agree…he is!

It all started at a progressive dinner with parents from St. Pius X.
Some of the parents decided to spice up the dessert portion with
a little music. When it went better than expected, they raised the
question, “Why don’t we become a band?” Brothers-in law Henry
Guste and Sean Mayfield brought their guitar and drums and joined
Todd Adams, on guitar and a vocalist. Chrissy Bourdais was on
board with her vocals. Soon after Neivon Morantez joined the band
and took them to the next level. GRäDU was established. Christian
Weiler, an attorney, organized the early event and became their
manager! All members live in Lake Vista and have children attend-
ing St. Pius X. There is a strong common interest in the music they
play as well as in IPAs. You could say they run on hops!
If you missed them at Red Eye and F&Ms, you might want to
catch them December 9 at Hurricane’s. In February, they will
be performing at Rock N Bowl for a fundraiser for brain cancer
patients, a cause that is close to them.
Though not quite ready to give up their day jobs as river captain,
colorectal surgeon, medical sales and securities regulator, they
are enjoying their musical pursuits. Playing ‘90s alternative cover
music is what they do, but they are also writing some of their
own music.

For most individuals, the FSA comes in the form of a health FSA.
Employers can allow their employees to carry over up to $500
in unused health FSA funds. Or they can offer a grace period, pro-
viding employees with a two-and-a-half-month extension period
to cash in on better health. However, there is a catch – employers
don’t have to offer either option, which is why it is critical to use
your FSA now.
Not sure how to spend it? Head to the optometrist’s office for a quick
vision exam and splurge on some new specs. Or stock up on contact
lenses. Squeeze in that December dental cleaning that’s long over-
due. Or get your New Year’s resolution started early by getting on a
medically-necessary weight loss program. You can even say hello to
better health by undergoing a smoking cessation program. Or even
schedule elective surgeries, such as corn removal.
Don’t forget to count parking-related expenses for medical ap-
pointments either. Even tolls that are incurred when driving to
medical appointments can be counted as FSA expenses.
Going to the drugstore can be a good idea as well. The Employ-
ers Council on Flexible Compensation (EFSA) lists over 32,000
over-the-counter items that can be purchased with FSA money
without a prescription. In other words, stock up on Band-Aids in
December rather than January.
Don’t feel overwhelmed when draining your flexible spend-
ing account this holiday season. Stock up on needed items, get
important screenings (vision, dental and medical), and be sure to
include fees incurred for medical appointments. Make the most of
your FSA before the New Year arrives!

1. Shingles are Curled or Crumbling
The condition of your shingles will be a clear indication as to
whether or not your roof needs to be replaced. If your shingles
are curled on the edges or crumbling, it’s definitely time to re-
place them.
2. Missing Shingles
Shingles work like a suit of armor for your roof. If any pieces are
missing, the integrity of the entire roof is compromised, allowing
leaks and any number of other problems to occur.
3. Bald Patches
Bald patches occur when the asphalt granules your shingles are
made of begin to come loose. If you notice inconsistent color
patterns on your shingles, you may have a problem. Check your
gutters for debris - loose granules tend to get washed away and
collect in gutters.
4. Age
Is your roof more than 20 years old? The average life of a roof is
between 20-25 years. Even if you don’t notice any major flaws,
it may be a good idea to start considering your options for a new
roof. Taking preventative measures before there is ever a prob-
lem can save you money and headaches down the road.
5. Curb Appeal
If you’ve made any major exterior upgrades and, in comparison,
your roof looks dated or worn, you may want to have it replaced.
Discoloration and fading can take away from the aesthetic appeal of
your home. Choosing to replace the roof now will freshen up your
exterior and give you peace of mind for the next couple of decades.
6. Gaps
Take a quick look around the inside of any attic spaces. If you
notice any light coming through any part of your roof, you have a
compromised roof. These gaps can be caused by moisture issues.
It is a good idea to check for them often, but especially after any
major storms.
7. Mold or Moss
If you notice any mold or moss growing on the surface of your
shingles, be sure to have a roofing professional take a look right
away. Both can spread quickly and continue to grow even if you
have the roof cleaned.
If you notice any of these problems, call a roofing professional
as soon as possible in order to prevent more extensive damage
to your home. Compare price quotes and check references to be
sure you are hiring a professional who can best accommodate
your needs and budget.
Replacing a roof is a major project and expense. If you think
it may be time for a new roof, look for some of these telltale signs.
