birthday. Even though we had a wonderful time and the kids
had a blast catching up with friends and family, we still con-
sider ourselves some of the lucky ones to make it out of town
before the next snowstorm hit. Have a happy Easter and

I’m assuming that spring fever is in the air in Charlotte. I
know I am anxiously awaiting June when my kids are off
for the summer and we can spend more time at the beach.
Even though we are only 15 minutes from the beach in
South Florida, there still seems to be not enough time dur-
ing the school year to get the much-wanted time spent at
the sea picking up shells and relaxing reading a good book.
I have big plans for spending a lot of time picking up shells
with the kids. Lucky for me, the only cold, nasty weather my
family encountered this winter was our short trip to Boston
in February. We visited Boston to celebrate my son’s ninth

Four-Cheese Zucchini Strata
INGREDIENTS
• 4 medium zucchini and/or yellow summer squash, halved
lengthwise and cut into 1/4-inch slices (about 5 cups)
• 2 tablespoons olive oil
• 8 cups garlic-flavor Italian flatbread (focaccia) cut into bite-
size pieces
• 1 cup shredded provolone cheese (4 ounces)
• 1 cup shredded white cheddar cheese (4 ounces)
• ½ cup crumbled feta cheese (2 ounces)
• ½ cup grated Parmesan cheese
• 7 eggs, lightly beaten
• 2 cups milk
• 2 tablespoons snipped fresh parsley
• ½ teaspoon salt
• ½ teaspoon ground black pepper
• Snipped fresh parsley (optional)
DIRECTIONS
1. Lightly grease a three-quart rectangular or oval baking dish;
set aside. In an extra-large skillet cook squash in hot oil over
medium-high heat until light brown, stirring occasionally.
Remove from heat. Place half of the bread pieces in the pre-
pared baking dish.Top with half of the squash and half of
each of the cheeses. Repeat layers.
2. In a large bowl combine eggs, milk, parsley, salt, and pepper.
Pour evenly over layers in baking dish. Using the back of a
large spoon, gently press down on layers. Cover with plastic
wrap and chill for 2 to 24 hours.
Preheat oven to 325 degrees F. Remove plastic wrap. Bake for
45 to 50 minutes or until set and an instant-read thermometer
inserted into the center registers 170 degrees F. Let stand for 10
minutes before serving. Sprinkle with additional parsley if desired.

Dinner In An Italian Paradise
Piper Glen Residents Enjoy A Night Of Excellent Food And Fun
It’s no wonder the creators selected the word,“Bravo!” for the
name of their restaurant chain. After our visit, that was the
response everyone seemed to have.
On January 27, Bravo Cucina Italiana hosted 22 residents of
Piper Glen for a full Italian dinner.The event was sponsored by
the restaurant and N2 Publishing, the company that provides
the monthly magazine on life in our neighborhood.
Bravo General Manager Amanda Hall, was attentive to every
detail, providing a skilled wait staff that served our party a meal
that was unforgettable.The ambiance of the room was warm
and soothing, making it a perfect setting for conversation over
our delicious Italian fare.
In addition to our Piper Glen residents, several business own-
ers who support the magazine were present. Dr. Meagan
Edwards from Spectrum Eye Care, Pete Barnes, owner of The
Olive Tap, Andrew and Marilyn Robertson with Buff and
Coat, George and Gail McDowell of the McDowell Realty
Group, and John Morris and Jason Reagan from Hound Ears
Resort in Boone all enjoyed dinner with us.
N2 Publishing’s social events provide Piper Glen residents a
fun evening over great food. In these settings, our residents
enjoy talking with their friends and neighbors, while also
meeting the owners of the fine businesses that support our
neighborhood magazine. These dinners are complimentary
from the restaurant to Piper Glen homeowners as a way of
introducing some of their favorite customers to the excellent
meals they serve.

Diane Lapoint: “What a wonderful evening we had at Bravo!
The calamari, as well as the tomato and mozzarella appe-
tizers, were a delicious beginning. Then, my salmon entrée
arrived, cooked just as I requested and with a marvelous fla-
vor. We all appreciated that the restaurant is so clean and the
serving staff was excellent.”
Eula Morant: “I will surely be going back and bringing my
friends to Bravo Cucina Italiana.The atmosphere of the restau-
rant gave me the feeling of upscale dining at a reasonable price.
I honestly didn’t know salmon could be so tasty.”
Dorothy Roberts remarked, “The pasta was divine with its per-
fectly spiced sauce and the plump, savory shrimp.”
Marshelette Prime: “The space and setting Bravo set aside for
us was very accommodating.The wait staff was very attentive as
well. I had the shrimp fra diavolo, which was very delicious.The
kitchen had no trouble altering the dish for my dietary needs.
Even the bar willingly adjusted my berry mojito beverage to my
preference. I was very happy with both the meal and the service.
How wonderful of Bravo to host this function.”
Debbie Peterson: “Our evening at Bravo was delightful. From
the cordial staff to the delicious salmon in such an attractive set-
ting – it all made for the perfect dinner.”
We deeply thank Bravo Cucina Italiana and General Man-
ager Amanda Hall for a memorable evening. And to all our
neighbors in Piper Glen, if you want to enjoy an excellent Ital-
ian lunch or dinner in a warm, friendly setting, you’ll have to

A New Family You’re Sure To Remember

Some day soon, when you’re walking through one of the local
shops in the Piper Glen area, you’re likely to spot a new
family you’ll remember quite well. The reason is you’ll spy three
charming little ladies who are all the same age!
Keith and Flora Mays bought their home on Lucern Court,
part of the Inverness section of Piper Glen, this past July.The
couple has a son, Porter, age 3, as well as a beautiful set of trip-
lets – Islay, Virginia, and Mary Grace, all 20 months old.
The children are delightful, just smiling and cooperative as we
asked them to pose for our photo shoot. Porter is a happy, play-
ful little fellow and his sisters are quite gracious, freely offering
visitors their favorite toys. We learned that Islay’s name came
from the name of an island off the coast of Scotland that Flora
and her father used to visit. Her name is pronounced “eye-la.”
The family’s friendly pets are an English springer spaniel named
Lilly and a Weimaraner named Maisie. Keith pointed out that
the home came with a full acre yard and a small bridge in the
back.The house has a large windowed section on back that gives
full view of the yard, something the parents will appreciate even
more once the little ones begin going
outside on their own.
Keith holds an MBA from Auburn Uni-
versity and is the managing director for

Flora was an elementary school teacher
before becoming a full-time mom. Even
with the busy responsibilities of caring
for her four small children, she takes time
to participate with a Masters swim team
mornings at 5:30 AM at the Blakeney
Racquet and Swim Club. Health is impor-
tant to Flora, who has also competed as
a triathlete. Another activity important
to her is being a member of the group,
Mothers of Multiples, that gives moms
like her helpful information and support
in caring for multiple-birth children.
Before beginning his career in finance,
Keith served with the 82nd Airborne
Division of the United States Army. He
was trained as a linguistic interroga-
tor in Military Intelligence specializing
in Spanish. Keith graduated from the
Defense Language Institute and was
certified as a Spanish interpreter - second
language interrogator. He also completed
35 parachute jumps as part of his being in
one of the most respected airborne assault
units in the world.
When he finds the time, Keith enjoys
hiking and camping. He also works with
the humanitarian group known as The
Bridge Foundation.The goal of this orga-
nization is to create a way for friends,
both old and new, to meet regularly to
help each other and our community.The
setting is one of intellectual advance-
ment and legacy development.The annual
result of their efforts is the awarding of
“The Bridge Scholarship,” a $20,000 col-
lege award given every year to a deserving
high school senior in Charlotte. (www.

Keith is originally from Ozark, Alabama,
while Flora was raised in Williamsburg,
Virginia.Together, they chose Charlotte
as the place they’d want to live.
“We’d both lived in North Carolina at
different times,” shared Keith, “And we
really appreciate the Southern culture.
We’ve enjoyed meeting the very friendly
people in Piper Glen and have joined
the country club. Flora and I feel this is a
wonderful place to raise a family.”

TOUR THE FAMOUS
‘DOWNTON ABBEY’
Few places on earth stir the imagination and historical interest
of television viewers like England’s Highclere Castle. You know
the impressive structure better as Downton Abbey.
The emotional drama of the PBS series has a hold on both
American and European viewers. It consistently draws record
ratings, better than those of most mainline network series.
Most agree that it’s the creative talent of writer-producer Julian
Fellowes that’s at the heart of the success.Talented actors and a
well-told storyline help make Downton Abbey one of the most
popular programs ever.
In August of last year, Piper Glen residents Stuart and Debby
Woodhouse, along with daughter Rachel, participated in a tour
of Downton Abbey. It was booked by WTVI through travel
agent Barry Ward of Valerie Wilson Travel (www.valeriewilson-
travel.com). WTVI is the regional Public Broadcasting Station
and carries Downton Abbey on Sunday evenings (wtvi.org).
Their adventure also included seeing some of England’s other
well-known destinations.They enjoyed with their group a
private tour of Windsor Castle, a tour of Buckingham Palace
including the Queen’s Garden, and even the Sunday morning
service at Westminster Abbey.
In addition, the Woodhouses took a side trip, meeting friends
in Salcombe and visiting St. Michael’s Mount. Next, they trav-
elled to the areas that have been used for location filming for
sequences in a number of Downton Abbey episodes.
“The characters of the program sometimes go to church, a
park, or a pub. We enjoyed going to the actual location for
those scenes in Bampton, Sussex, because they were familiar to
us,” shared Debby.
“Another lovely place they took us was Basildon Park, where
‘Cousin Rose’ had her coming out party. We were served high
tea on the classic tiered plates including tasty scones with cream
and jam,” she added.
“Every fan of the program recalls that ‘Mary’ and ‘Matthew’
planned to live at ‘Grey’s Court” in Oxfordshire. It was so
much fun seeing the place our favorite couple hoped to call
home. It was also the setting for the family picnic and the
cricket match scenes,” said Debby.
“When we arrived at Highclere Castle, which is in Newbury,
we were greeted with flutes of champagne. Then they led us
into the ‘big room,’ or salon, that appears on the program so
often. We loved sit-
ting there for awhile
before being allowed
to climb the stairs. I’ll
enjoy the show even
more having been
inside,” she smiled.
“Another thing every
fan of Downton
Abbey would recog-
nize is the dining hall
with the giant paint-
ing of King Charles
I, mounted on a horse. We got to see it hanging on the wall
there and it really is impressive!” laughed Debby.
The visitors learned a few of Downton’s “secrets” as well. For
example, who knew that the library has an actual hidden door
that opens when you swing one of the bookshelves? This feature
hasn’t been revealed on the program – at least, not yet.
Highclere Castle has been in the family of Lord and Lady Car-
narvon for centuries. Another fascinating story is that the fifth
Lord Carnarvon was part of the expedition that discovered the
tomb of Egyptian King Tutankhamen. There was supposedly a
curse on the life of anyone who disturbed the tomb. Ironically,
before he could depart Egypt, Lord Carnarvon suffered an acci-
dental razor cut which later became infected. He died in Egypt
before he could return home. A collection of actual relics from
the tomb is on display in Highclere’s basement.
“It was such a wonderful adventure,” said Debby.
“And to round it all off, as we were driving away from the
‘abbey,’ we found that the large iron gate had already been
locked.The staff was nowhere to be seen and it appeared we
were stuck there. Finally, one remaining lady attendant discov-
ered us. She had to phone to get the security code for the gate.
Too bad. How great to have been able to say we had actually
spent a night at ‘Downton Abbey,’” she smiled.

Dr. David Wichnoski’s family came to Charlotte in 1974 when
he was six years old. Ever since then, the Queen City has been
home to him. David’s father had brought the family to North
Carolina when he was offered a job teaching at UNCC. He
continues in this role to this day.
Dr. Wichnoski and his wife, Wendy, have two children, Connor
(11) and Caitlin (14).The family resides in the town of Marvin,
just outside of Charlotte.
Dr. Wichnoski attended local schools, later receiving his B.S.
degree in Biology at the University of North Carolina at
Charlotte and his Doctor of Optometry from the Southern
College of Optometry in Memphis, TN. After receiving his
doctorate, he performed residency training at William Dorn
Veterans Hospital in Columbia, SC. This was a multidisci-
plinary approach to eye care which exposed him to many other
areas of medicine and has prepared him well to become a pri-
mary care eye doctor.
After completing his residency training
in 1997, Dr. Wichnoski started Spec-
trum Eye Care the same year. His prac-
tice utilizes the most modern technology
in diagnosing vision and eye problems
during examinations.
One high-tech tool the practice utilizes
is the sophisticated OCT (optical coher-
ence tomography) system that enables
them to see both 3D as well as under-
neath the surface of the retina.The result
is they get a view of early signs of condi-
tions like glaucoma and macular degen-
eration. In turn, patients have greater
confidence in the accuracy of the assess-
ment of their eye health.
“Yet an optometrist shouldn’t just treat
the immediate vision problem,” shared

Dr. Wichnoski, “He needs to be contin-
ually watching for other things. The eye
is truly a window where we can look to
see what else may be happening inside
the patient.”
The doctors at Spectrum Eye Care take
special care during an eye exam to look
for signs of certain chronic diseases. For
example, in addition to the more com-
mon eye problems, they’re often able to
detect signs of high blood pressure, dia-
betes, multiple sclerosis, or cancer while
looking into the eyes of a patient.This is a
very valuable benefit to every person hav-
ing regular eye exams.
“And, if we see symptoms of something
else going on, we’ll advise the patient
regarding the medical specialist he needs
to see to make a full diagnosis and begin
treatment,” said Dr. Wichnoski, adding
that, “A simple eye exam could even save
a person’s life.”
Eye care for children is also important.
Approximately 80 percent of all learn-
ing during a child’s first 12 years comes
through vision. It is not uncommon for
the doctors at Spectrum to help young
patients that have had little success in
the past. In some cases, they find prob-
lems that may have been missed by a
child’s pediatrician.
It’s reported that at least 10 to 15 per-
cent of children are at risk for vision
impairment. Prevention of these condi-
tions can be easy and can help your stu-
dent perform his or her best at academ-
ics and sports. According to the Ameri-
can Optometric Association (AOA),
infants should have their first compre-
hensive eye exam at six months of age.
Children then should receive additional
eye exams at three years of age, and just
before they enter kindergarten or the
first grade at about age five or six.

Hi my name is Gracie,
I took a plane from Turks & Caicos Islands just over a year ago
to live with a family in North Carolina that wanted me because
I was so cute! When I was a small puppy, I was found by some
very nice tourists while they were out exploring my island. I did
not have a family to take care of me and I was very hungry.The
nice people brought me to Potcake Place which is a dog rescue
charity based in Providenciales,Turks & Caicos Islands. Potcake
Place gave me a haircut, fed me and gave me a place to sleep
until they found a family that would love me. My name is Gra-
cie but my bread is Potcake.
Potcake is the name given to the dogs of the Bahamas and
the Turks & Caicos Islands. It came about because the locals
fed us the the thick leftovers of a pea and rice stew caked
remains of the cooking pot. The type of dog I am is what
they call a mutt, with ancestors including terriers, bully
breeds, and the Carolina Dog.

The medical staff serving Spectrum’s three clinics all have
impressive credentials:
Dr. Megan Price Osborne joined Spectrum Eye Care in 2008.
She received her Doctor of Optometry degree from the Penn-
sylvania College of Optometry in Philadelphia.
Dr. Eric Intihar came to the staff in 2013. Dr. Intihar is a
graduate of the Pennsylvania college of Optometry at Salus
University in Philadelphia.
Dr. Meagan Edwards came onboard the medical team of Spec-
trum in 2014, having been a lifelong North Carolinian. She
received her Doctorate in Optometry from the University of
Alabama at Birmingham School of Optometry. Dr. Edwards
says she first became interested in optometry when she learned
that her father had vision problems related to his diabetes.

We all know that Punxsutawney Phil “saw his shadow” on Feb-
ruary 2 - which meant six more weeks of winter. And, February
did have some of the coldest temperatures of the year. So, what
does March hold for us? In like a lion and out like a lamb?
Piper GlenWomen’s Club has a calendar full of events for March
and we don’t want the weather keeping the ladies away.

fun, fun evening for all that participated.The event was open to
ladies and their spouse/significant other and singles – over 80
attended. It was an evening of great food from Dean & Deluca,
Blackjack, Craps, and Poker – played with funny money, laugh-
ter and friendship. And, did you hear about the Dice Box Raf-
fle? In just 30 minutes, all 150 boxes sold – with winners galore.
Cannot thank Juliet & Scott Larson (PG residents) enough for
opening their home for this exciting event.
For all that attended, this is just a taste of what the PGWC
ladies can put together. There are plans in the works for
future exciting events.
On March 18, a Progressive Luncheon is planned. If you have not
seen information on the luncheon, please make note and “reserve
your seat”to participate in this “yummy”ladies event.We’ll start
at PF Chang’s (Phillips Place) for appetizers and then we’ll walk
over to Upstream for the entrée. Desserts can be found at Dean
& Deluca. All the fun begins at 11 a.m.You can find more details

On the Moments of Service side of things...
February was our designated month for collecting items for
Classroom Central.The most needed item is 3-ring notebook
paper. All items collected go to help the kids in our communi-
ties. However, just because we “designated” February, it doesn’t
mean we will not take your items anytime and deliver to Class-
room Central. And, remember that you can link your Harris
Teeter Vic Card to #4938 so that HT will give a portion to
Classroom Central. Amazon will also setup an automatic dona-

March 11 is the annual YWCA “We Believe” luncheon. Ladies
are already signing up to attend. PGWC plans to have one or
two filled tables showing our support to this amazing cause. In
2014, we filled two tables.
Heads-up! Not too early to sign up to be on the PGWC Team
walking the Yellow Brick Road on Sunday, April 19.This family-
friendly walk is to support the work of Charlotte Family Hous-
ing. Just a 2.5 mile walk through the beautiful Plaza Midwood
neighborhood. Again, more details can be found on our website.
Stay tuned for more community events and philanthropic
opportunities where PGWC ladies and neighbors can partici-
pate in 2015.
There is nothing lamb-ish about where the PGWC Clubs are
going in 2015.
NEW - A Bowling Club has been formed.You don’t have to be
an experienced bowler and can even be a first-timer. It’s all about
fun, laughter and getting together. First game is set for March 2,
10 a.m. at the Park Lanes, Montford Drive, Charlotte. Plans are
to meet monthly – first Monday of the month (except for July).

Cards, anyone? The Bridge Club is now meeting twice a week
– Mondays and Thursdays. Mahjong is really a fun game...but,
if you think it’s anything like you play on the computer...think
again. Great teacher, though – so, join the Club on Tuesdays.
The Couples’Wine & Dine Club is a favorite – and, rightly
so. In 2015, its menus are from across the U.S.The theme is an
American Road Trip. And, how fitting is this – March will have
the menu planned from foods in the “Windy City” – Chicago.
Let’s not forget about the Book Club, Bunco, Girls Night Out,
Home & Garden, and Travel & Culture. So many exciting eve-
nings and day trips are planned.
