Harvester is the U.K.’s largest full service restaurant brand with 220 restaurants serving in excess of 25 million meals per year.
I am currently responsible for 15 restaurants in a range of Retail and Leisure park locations including the Milton Keynes Xscape and
the O2 Dome in London with annual revenue of circa. £18million p/a. I quickly and successfully built my team and opened three
new restaurants last financial year. It has been an exciting challenge learning this new market and we are now delivering brand
leading results in the areas of NPS (exited the year on 69%, YTD 14% up year on year, the best result in the brand), sales and
volume growth (+11.4% like for like).
Mitchells and Butlers Retail Business Manager, Harvester October 2008-October 2013
Responsible for 15 businesses in Surrey, Middlesex & Berkshire with revenue in excess of £20m p/a. I successfully built my team &
significantly improved all areas of the balanced scorecard. In addition to the profitable and safe running of the district, I was
responsible for a novel induction process to improve retention through betterengagement, brand wide changes to our security
procedures and pioneered what came to be Harvesters’ “Grill Skills” programme.

productivity gains and generating Labour Scheduling rules for those businesses.Reporting at site, regional manager and
director level.
Coaching and supporting General Managers and RBM’s in all areas of Business Productivity.
Analysis and interpretation of data, tuition of newly appointed General Managers on Labour Scheduling systemvia the
CRMC course,and contributing to the ongoing evolution of the Business Productivity Team.

Toby Carvery General Manager September 2000 – March 2008
Toby Carvery is owned and operated by Mitchells and Butlers PLC, with over 160 outlets nationwide. General Manager of
businesses with revenues of £1.5m - £2.5m p/a.
