Mitchells and Butlers Retail Business Manager, Harvester Retail & Leisure Park businesses. October 2013-Present
Harvester is the U.K.’s largest full service restaurant brand with 220 restaurants serving in excess of 25 million meals per year.
I am currently responsible for 15 restaurants in a range of Retail and Leisure park locations including the Milton Keynes Xscape and
the O2 Dome in London with annual revenue of circa. £18million p/a. I quickly and successfully built my team and opened three
new restaurants last financial year. It has been an exciting challenge learning this new market and we are now delivering brand
leading results in the areas of NPS (exited the year on 69%, YTD 14% up year on year, the best result in the brand), sales and
volume growth (+11.4% like for like).
Mitchells and Butlers Retail Business Manager, Harvester October 2008-October 2013
Responsible for 15 businesses in Surrey, Middlesex & Berkshire with revenue in excess of £20m p/a. I successfully built my team &
significantly improved all areas of the balanced scorecard. In addition to the profitable and safe running of the district, I was
responsible for a novel induction process to improve retention through betterengagement, brand wide changes to our security
procedures and pioneered what came to be Harvesters’ “Grill Skills” programme.
Key Responsibilities:
 Overall accountability for performance of the businesses across the balanced scorecard.
 Delivery of the P&L – building sales and controlling costs.
 Safety of the business and the integrity of Harvester’s reputation.
 Development and retention of team.
 Consistent delivery of Brand standards and the Guest Experience.

 Innovation Menu trial – operational implementation and feedback.
 Trial District for Go-Technology implementation.

 Innovation in team inductions that has increased stability and retention whilst reducing cost.
 Introduced “virtual cluster” meetings which are now being rolled out across the brand.

Mitchells and Butlers Operational Development Secondment March 2008-October 2008
Business Productivity team for All Bar One and Harvester.
Key Responsibilities:
 Interrogate all aspects ofoperational productivity within both brands at individual business level. Assessing potential
productivity gains and generating Labour Scheduling rules for those businesses.Reporting at site, regional manager and
director level.
 Coaching and supporting General Managers and RBM’s in all areas of Business Productivity.
 Analysis and interpretation of data, tuition of newly appointed General Managers on Labour Scheduling systemvia the
CRMC course,and contributing to the ongoing evolution of the Business Productivity Team.
Key Achievements:
 Successfully identified better ways of working within all businesses audited.
 Significant Productivity gains across both brands.
 Success in this secondment led to Regional Manager Appointment within 6 months.
Toby Carvery General Manager September 2000 – March 2008
Toby Carvery is owned and operated by Mitchells and Butlers PLC, with over 160 outlets nationwide. General Manager of
businesses with revenues of £1.5m - £2.5m p/a.
Key Responsibilities:
 Overall responsibility for performance of the business across the balanced scorecard.
 Recruitment, development and retention of team.
 Delivery of the P&L account and Brand standards.
 Hosted trials of new initiatives, products and systems before full scale roll out.
 Provide cover for the Regional Business Managerduring annual leave.
Key Achievements:
 Excellent sales growth underpinned by firm cost controls. Consistent delivery of outstanding P&L’s. Particular success in
growing sales.Aldenham regularly performed in the top 5 businesses nationally on sales, uplift in excess of 50% over two
years.
 Elevated each business Imanaged into the top 10% within the Brand for quality, growth and/or sales volume.
 Re-invigoration of brand standards within the businesses,ensuring consistent and flawless execution.

Managing the trial house involved the implementation and assessment of novel products and processes,giving feedback up to and
including Operations Director level for the Restaurant Division.
Regularly acted as the ambassador for Toby Carvery when demonstrating the brand to investors and otherVIP’s.
Also involved in menu changes,checking all software was correct and functioning at POS including recipes & stock expectancy
reports. Menu implementation, final check and verification before roll out. Provided feedback throughout on operational matters.

 A qualified pilot with a Microlight rating, I get pleasure from travelling the U.K. and the challenges of flying and maintaining

 As a keen traveller I enjoy combining my travel interests with my passion for food and drink to learn about different cultures.
