  • 1. Recipe Humitas Salteñas
  • 2. Ingredients
    • • 12 Corns on the cob
    • • 1 Small pepper (50- 100g)
    • • 1 Onion (100g)
    • • Pumpkin (½ k)
  • 3. Ingredients
    • • Goat cheese (½ k)
    • • Salt or Sugar
    • • Pepper
    • • Oil
  • 4. Method
    • • 1) Select the corn
    • Select the corns wich must be tender as well as the grains of corns should be big
  • 5. • 2) Cut the corns as follow:
  • 6. • 3) Select and peel the best corns husks as show in the image:
  • 7. • 4) Grate the corns separating the grains cob
  • 8. 5) Wash and cook the husks
  • 9. * Cook the husks for about 15 minutes and take out them
  • 10. • 6) Cut the pumpkin into small cubes
  • 11. 7) Place the pumpkin and grains of corns in a food processor
    • * We have to processed until the mixture is creamy
  • 12. *Note: If the mixture doesn’t have the desiere consistency add a little milk
  • 13. • 8) Add salt (or sugar if you preffer) to taste
  • 14. • 9) Pill and chop the onion as well as you have to chop the green pepper
  • 15.  
  • 16. • 10) Fry the onion and the green pepper
    • Fry over a law heat for 5 minutes the onion and the green pepper in enough oil meanwhile add salt and pepper to taste
  • 17.  
  • 18. • 11) Mix the preparation with the frying onion and green pepper
  • 19.  
  • 20. • 12) Assemble the humitas with the mixture and add the goat cheese
    • Two husks washed are placed in reverse.
    • The mixture is place in the middle
  • 21. * For better taste we can add a piece of cheese

  • 24. • 13) Cooked in salted boiling water
  • 25. • 14) Wait an hour and take out the humitas from the pot
    • * The humitas are completely ready when the husks are becoming yellow
  • 26. • 15) The humitas are ready to taste
