• Add half an avocado to the pesto for a creamier sauce

How to Make!
• Preheat the oven to 425 degrees F
• Combine all pesto ingredients in food processor
• Blend all together until smooth
• Toss the turnips, onions and zucchini in a bowl with a drizzle of olive
oil, salt and pepper
• Spread all vegetables on a baking sheet and and bake for about
45 minutes or until golden brown; turn them over occasionally.
• Combine vegetables, cooked pasta, and kale pesto and enjoy!

Stir Fry

Ingredients
• 4-6 kale leaves
• 1 clove of garlic
• 1 cup zucchini roughly chopped
• " cup spring onion sliced
• 1 cup Japanese turnips roughly chopped
• 1 cup green beans
• 2 cups of chicken cubed OR 2 cups of peeled shrimp
• 4 cups of cooked rice
• Sesame seed oil and soy sauce OR teriyaki sauce
• Sesame seeds (Optional)

How to Make!
• Tear the kale leaves apart into pieces and remove the stems
• In a pan or wok, add oil, crushed garlic, and stir the chicken or
shrimp over medium heat until cooked
• Add the kale leaves and sautée until wilted
• Add in the remaining vegetables, soy sauce and sesame seed oil
OR teriyaki sauce and stir for about 5 minutes
• Add the rice and continue to stir until evenly mixed.
• Sprinkle some sesame seeds on top and enjoy!

• Add red pepper flakes for a spicy kick!
• Do not add any salt; the soy sauce/teriyaki sauce will be plenty
salty!
