This document describes Château Les Graves de Viaud, an organic and biodynamic vineyard located in Bordeaux, France. It discusses the estate's 11.5 hectares of vineyards situated on clay and gravel soils with southern exposure. The estate practices organic and biodynamic viticulture without animal manure or plowing. Wines are produced using wild yeasts and natural fermentation. A variety of wines are produced with different aging techniques including tanks, amphorae, and barrels. The estate also collaborates with other local winegrowers on its "La Colombine" label.
3. A PLACE, A STRORY A PROJECT
At the heart of the coast of Bourg, ChateauLes Graves de Viaud,a 15
hectaresestate, extends along a hillside with souther exposure, comprising
of vineyards,meadows and woods. It is inthis beautiful environmentthat
are located on 11.5hectars vineyards of clayeyand gravels soils.
It was herein2010after rich Professional careers in other professions that
wesettled. ChâteauLes Graves deViaud is committed to viticulture that
respects the environmentand life in general. Far beyond our Organic and
Biodynamic approach, we opt for agriculturethat respects the soil
(conservation agriculture) and animallife (elimination of all animal manure).

4. ORGANIC AND BIODYNAMIC VITICULTURE
Since 2010,we havebeen practicing organic and biodynamic farming.
WeuseBordeaux mixture, herbal preparations and yeast and bacterial
fermentations to fight against diseases.
Wefertilize oursoils with plant seedlings and biodynamic preparations.
Plowing is totally prohibited, as areanimal compost generallyproduced by
industrial farms.
Weare engaged in a vast program of replanting trees in the form of nurseand
forest hedges and trees in the vines in agroforestry.
5. WILD YEASTS AND NATURAL FERMENTATION
Theharvest is done mechanicallyor manuallydepending on the type of wine
sought.
Themechanical harvest allows us to harvest inthe cool veryearly inthe
morning tohave fresh grapes without resorting to heat treatment.
OurDemeter specifications impose winemaking without input, only sulfuris
authorized. Naturalfermentation takes place with indigenous yeasts.
Wefavor deep and soft extractions, eitherby punchingdown, or by load
shedding. Thevatting is long at least 25/35days.
6. PERFECTAGING
It is the aging that gives style to the wines.
Our fruit wines are aged in vats or in amphoraewith weekly lees
stirring for 1year.
Theother vintages are maturedin barrels, the choice of barrels,
their size and age depends on the typeof wine desired, and the
maturity of the vintage, with respect for the wine.

result from the collaboration between Usand talented Winegrowers
from ourregion.

Our wines are part of the tradition of Bordeaux terroirs and that of
great blended wines. Always with the permanent concernof
respecting the harvested grapes.

Merlots with a taste of ripe fruit,cherries, fresh or sometimes candied
plums, peppery notes with round, sweet tannins,
Cabernet Sauvignon, its dense color, its fresh blackcurrantaromas, its
powerful tannins,its vegetal notes of honeysuckle.
The delicate Cabernet Franc, with aromas of peony, small red fruit, fine

11. AGING IS MAGIC
Ourdifferent aging technic allow the grapestoexpress themselves in different
ways,we never assemble the different kind ofaging.
Thetank, allows to havewines on the fruit, tokeep the freshness ofyouth.
Amphorae, a novelty since 2014 in our winery, still in experimentation, they
allow us to havefruit wines with very fine andelegant tannins, lotsof
sweetness andexceptional minerality.
Thebarrels, 225L, 300L or 500L each volume has its volume, each cuvée its
heaters andits wood source, the great tradition ofclassic breeding but also this
touch ofmodernity with the 500L barrels which bringless toasted, toasted
notes andmoreelegance..
