This document summarizes a Cabernet Sauvignon wine from Undurraga in Chile. The wine is produced from grapes grown in the Maipo Valley in alluvial soils. It undergoes a long fermentation and aging process including 12 months in French oak barrels. The wine is intense ruby in color with notes of red fruit, spice, chocolate, and menthol on the nose and palate. It has well-integrated tannins and balances fruit and oak flavors.

Collina del Tiglio is a family owned winery in Piedmont, Italy. Our vineyards are located among the medieval towns and castles of Alto-Monferrato.
The 10 hectares of vines, some more than 50 years old, include Chardonnay, Cortese, Dolcetto, Barbera, and Cabernet Franc varietals. Our viniculture philosophy is a blend of personal attention and a modern approach.
Keeping organic principles in mind, Collina del Tiglio tries not to interfere with the natural Piemontese weather patterns and eco-systems.

d’Arenberg is one of the most significant wineries in McLaren Vale. Founded in 1912 by Joseph Osborn, fourth generation, Chester Osborn took over the reins as Chief Winemaker in 1984. The last decade has seen Chester develop a range of white wines every bit as individual and thrilling as the red Rhone varieties with which the company made its name. There is method to his madness and no one knows their soils and vines better than Chester.

f you offer a service on the web, odds are that someone will abuse it. Be it an API, a SaaS, a PaaS, or even a static website, someone somewhere will try to figure out a way to use it to their own needs. In this talk we'll compare measures that are effective against static attackers and how to battle a dynamic attacker who adapts to your counter-measures.

2. Beringer Classics
WHITE ZINFANDEL
VINEYARDS
The coordination between viticulture and winemaking teams is essential
when choosing fruit, to achieve the optimum level of flavor and balance in
the wine. The vineyards selected for the Beringer Classics wines are
bathed in warm sunshine the majority of the day, to yield the most ripe,
sun-kissed fruit flavors in the grapes.
WINEMAKING NOTES
Winemaking begins in the vineyard and often peaks with the harvest of
the grapes that have been carefully tended all year long. Grapes for the
Beringer Classics White Zinfandel were picked at the peak of maturity
and brought into the winery for gentle crushing. By keeping the juice in
contact with the grapes’ red skins for approximately three hours, a light
blush color was retained. Beringer’s winemakers then used slow, cool
fermentations to preserve the vibrant, fresh strawberry, honeydew, and
citrus aromas and flavors.
TASTING NOTES
In making Beringer’s White Zinfandel, the focus is to highlight the fresh
red berry, citrus and melon aromas and flavors, and round them out with
subtle hints of nutmeg and clove. The wine has a youthful exuberance
that is enjoyable as a sipper on its own, or with a variety of dishes.
Alcohol: 10%
Beringer Classics wines boast some
of the best-selling wines in the

these wines offer dependable taste

6. RÉSERVE SPÉCIALE
CHARDONNAY
IGP Pays d'Oc Chardonnay
DESCRIPTION
Gérard Bertrand is passionate about the Mediterranean Art de
Vivre and is a specialist producer of premium wines from the
south of France. In his Réserve Spéciale range he reveals the
elegant, generous array of fruity flavours produced by the very
best terroirs in the region.
The exceptional terroirs of the Languedoc enjoy optimum
sunshine and low rainfall, bringing out all the complexity of the
region’s emblematic grape varieties and thus producing
top-quality wines.
TASTING NOTES
This grape variety stands out by its noble aromas and the
delicate wines it produces.
Fresh and flavoursome, this 100% Chardonnay comes from
coastal vineyards and offers fresh notes of citrus, ripe apple
and white flowers.
VINIFICATION AND MATURING
The grapes are harvested at night-time in order to preserve all
their freshness.
As soon as they reach the winery they are delicately crushed in
a pneumatic press.
After a static settling operation, low-temperature alcoholic
fermentation begins in stainless steel vats. Part of the must is
transferred to barrels to finish the fermentation.
In order to conserve the wine’s lively character, malolactic
fermentation is not performed.
After a light fining operation the wine is bottled.
* FOOD AND WINE PAIRING *
Serve with scallops, fish cooked in sauce, poultry and risottos.
8. VINEYARDS
Beringer Founders’ Estate Pinot Noir is from select vineyards throughout
Central California and the North Coast. The vineyards are bathed in
sunshine during the day and cooled by the marine layer in the evening,
ensuring even and steady ripening of the grapes. The Founders’ Estate
Pinot Noir grapes were picked as soon as they exhibited the ideal balance
of acidity and ripe fruit flavors.
WINEMAKING NOTES
Gentle winemaking techniques were used to protect the delicate qualities
of the Pinot Noir grapes in order to preserve the grapes’ lush color and
bright fruit flavors once the grapes were crushed. The majority of the
wine saw three to four months in French oak to highlight the wine’s toasty,
brown spice qualities.
TASTING NOTES
The Beringer Founders’ Estate Pinot Noir is bright ruby in color and
displays ripe currant flavors rounded out by aromas of cedar and spice. This
wine has immediate fruit-forward flavors that balance well with the toasty
smokiness of the oak. It would pair perfectly with a red wine risotto or
grilled salmon.

10. ORIGIN
Santa Ana estate, Talagante, Maipo Valley.
VINEYARDS
Soils: The soil is of alluvial origin and varies
between loam and loamy clay in texture. It is
of medium depth, flat and has good drainage
and moderate fertility.
Climate: The climate is sub-humid
Mediterranean. Winter is gentle with annual
rainfall averaging 200 mm, while summer is dry
and moderate with cool nights. This ensures the
production of healthy grapes with a delicate
texture and accentuated aroma.
VINIFICATION
Reception: The grapes were hand-harvested from
25-year-old vines into 500-kg bins. They were
then destemmed and gently crushed. The must
was cooled and macerated with the skins prior to
fermentation at a temperature of 5º C. for a
period of 3 to 5 days.
Fermentation: Fermentation took place in
stainless steel tanks at temperatures which varied
between 28ºC and 30ºC for a period of 7 to 10
days. Then the must was macerated with the skins
for an additional 5 to 10 days. 100 % of the wine
was aged in French oak barrels for 12 months and
then in the bottle for at least 10 months.
TASTING NOTES
This Cabernet Sauvignon was made with carefully
selected grapes from our Santa Ana Estate in the
Maipo Valley. It is intense ruby in colour and the
nose reveals red fruit, such as raspberries,
blackcurrants, ripe cherries and subtle notes of
spice and chocolate. The mouth is fresh with
notes of menthol and cedar. This is a
well-balanced wine with expressive tannins,
which contribute complexity and a good balance
between the fruit and the oak. This wine pairs
well with beef, game, lamb, pork and full-fat
cheese.
