2. “The best products from the best producers!”
So many of the dishes that are native to Campania have
been adopted by the rest of Italy, if not the world. Italian
food would not be the same without Campania’s Spaghetti
topped with “Pommarola”, the famous tomato
sauce. Campania is also the birthplace of the modern
Pizza, with the world’s first Pizzeria (still in business)
started on the streets of Naples. The cooks of Campania
were the first to use tomatoes. The volcanic soils of
Campania grow some of the best produce in Italy,
including the San Marzano tomatoes (PDO), whose deep
red color and rich flavor is popular for making sauces.
Campania is also known for its fruit orchards ranging from
its famous peaches and grapes to apricots, figs, oranges
and lemons.

3. Extra Virgin Olive Oil
There are three basic types of olive oils: extra virgin, virgin and pure olive oil. The extra virgin olive oil is the top
grade of the olive oils. The oil has less than 1% acidity, the olives have been picked and pressed the same day,
and the oil has a strong, green color with a perfect aroma. Essentially, extra virgin Olive oil should smell and taste
just like the olive from which it came from. Virgin olive oil is the next grade. It has less than 2% acidity with good
color and aroma. This may be the result of the next day olive pressing. The final grade is pure olive oil. This is
much lighter in color with little or no aroma. Pure olive oil is the result of a blend of virgin olive oil and refined oil,
which is generally extracted from olive pulp, skin and/or pits.

4. Tomatoes
Tomatoes & Tomato Puree Campania FoodsTomatoes are one of the most versatile and important foods and form
the backbone of Italian cooking. Naturally rich in Lycopene, an antioxidant thought to ward o cancer, tomatoes
are also an excellent source of Vitamins A and C and of mineral salts like potassium. Our canned and bottled
tomatoes are made with 100% Italian tomatoes grown in Southern Italy. They are picked only when fully ripe and
packed within 24 hours.
The Pomodoro di San Marzano, now grown in the soils around Naples, was first brought over from Spain in the
sixteenth century, but it was not until the eighteenth century that the tomato began to be used as a typical
ingredient of Neapolitan cooking. The San Marzano ecotype is grown specifically for transformation into peeled
tomatoes and is the only type cultivated in the Agro-Sarnese-Nocerino area. The soils in this area are among the
best in the entire country. The volcanic ash from nearby Mount Vesuvius combined with the rich earth of the preApennine hills have created a fertile terrain with very special physical and chemical qualities. As for the climate,
the area enjoys the beneficial influence of the sea air.
