1 oz. AMARO NARDINI
1⁄4 oz. APEROL
1⁄4 oz. FRESH LEMON JUICE
1⁄4 oz. CASTELVETRANO OLIVE BRINE
2 1⁄2 oz. PROSECCO
Add Amaro Nardini, Aperol, lemon juice, and
olive brine to a cocktail shaker. Add ice and
shake until chilled. Strain into a chilled coup
or cocktail glass. Top with prosecco and
garnish with olives.

GLASS: wine glass
GARNISH: lemon half-wheel and mint sprig
2 oz. ROSÉ
1 oz. COCCHI AMERICANO
1 oz. PAPAYA SHRUB (SEE RECIPE)
1⁄2 oz. FRESH LEMON JUICE
1 oz. PROSECCO
Add the rosé, Cocchi, papaya shrub, and lemon juice
to a cocktail shaker. Stir well and strain into a wine
glass filled with ice. Top with the prosecco and add the
garnish.
PAPAYA SHRUB
Add 5 to 8 chunks papaya, 1 cup rice wine
vinegar, and 1⁄4 cup sugar to a saucepan.
Simmer over very low heat for 20 minutes.
Cool for at least 30 minutes. Strain, bottle,
and
refrigerate for up to one month.

Strain into a chilled coup or cocktail glass. Top with prosecco and garnish with olives.

PAPAYA SHRUB (SEE RECIPE) 1⁄2 oz. FRESH LEMON JUICE 1 oz. PROSECCO Add the rosé, Cocchi, papaya shrub, and lemon juice to a cocktail shaker. Stir well and strain into a wine glass filled with ice. Top with the prosecco and add the garnish. PAPAYA SHRUB Add 5 to 8 chunks papaya, 1 cup rice wine vinegar, and 1⁄4 cup sugar to a saucepan. Simmer over very low heat for 20 minutes. Cool for at least 30 minutes. Strain, bottle, and refrigerate for up to one month.
