4. Gaminimas
1. Supjaustykite sviestą kubeliais ir dėkite į šaldytuvą
mažiausiai 15 minučių (kuo ilgiau, tuo geriau).
2. Sumaišykite miltus, druską, cukrų, sudėkite sviestą ir
trinkite pirštais, kol susidarys trupiniai. Po šaukštą pilkite
vandenį ir minkykite, kol tešla taps vientisa. Neperminkykite
– net ir ją paruošus, turi matytis mažučiai sviesto gabaliukai.
3. Paruoštą tešlą suvyniokite į maistinę plėvelę ar dėkite į
plastikinį maišelį ir valandai įdėkite į šaldytuvą.
5. Gaminimas
4. Išėmusi iš šaldytuvo, palikite kambario
temperatūroje 5-10 minučių. Tada įklokite ją į 22,5 cm.
skersmens apvalų kepimo indą, gražiai užlankstykite
kraštus ant indo sienelių (galima tešlą kočioti ir įkloti
iškočiotą lakštą, bet aš tešla indą išklojau pirštais).
5. Įkaitinkite orkaitę iki 180°C temperatūros. Tešlą
uždenkite kepimo popieriumi ir ant jo užberkite pupelių
ar ryžių.
6. Kepkite apie 15 minučių. Išėmę iš orkaitės leiskite
kelias minutes atvėsti. Nuimkite kepimo popierių su
ryžiais ar pupelėmis.

7. Vėl šaukite į orkaitę ir kepkite dar apie 10
minučių, kol tešla gražiai pagels.
8. Svogūnus perpjaukite pusiau, išimkite šerdis ir

svogūnus, šiek tiek pasūdykite. Retkarčiais
pamaišydami, kepkite apie 10 minučių, kol

(nutai) iš anksto perrenkami ir 3-4 val. mirkomi
šaltame vandenyje. Po to mėsa ir avinžirniai sudedami į
indą, užpilami šaltu vandeniu ir verdami. Karts nuo
karto kiaurasamčiu nugraibstomos atsiradusios putos.
Likus virti 20 min., pridedama pjaustytų ropinių
svogūnų ir bulvių. Įpjauti kaštainiai iš anksto išverdami
sūriame vandenyje. Po to nulupamos luobelės. Nulupti
kaštainiai taip pat sudedami į sultinį.
11. Gaminimas
Po to pridedama skiltelėmis pjaustytų cidonijų, nuplautų
kaukazinių slyvaičių, prieskonių (grūstų ciberžolių arba
šafranų užpilo – 1 valgomąjį šaukštą 2 porcijoms).
Bebaigiant virti dedama mėsmale maltų kurdiuko taukų. Jei
sezonas, galima pridėti pomidorų (vienai porcijai – 30 g).
Tuomet kaukazinių slyvaičių nereikia. Pateikiant į stalą piti
užbarstoma smulkiai grūstomis džiovintomis mėtomis. Ant
atskiros lėkštelės patiekiamos nuvalytos ropinių svogūnų
galvutės ir sumachas.
