For a long time, I wanted to learn how to make the perfect rice: loose, well-cooked, with the whole grain, with good flavor and good color.
After many years I learned, reading and experimenting with trial and error.
Now I share some of the tricks and secrets I learned to make the perfect rice.
1. TIPS FOR COOKING
While making custard use less sugar and add honey . the
custard will be delicious n flavoured.
2. TIPS FOR COOKING
• While making dosa before soaking, rost rice
slightly and then soak rice , it will help u to make
thin and crusty dosa.
3. • While making poories add some gram flour (
Besan) to it. It will make poories KHASTA.
4. • Always use Luke warm water while making
Roties , it will make soft roties.
5. • While peeling Garlic in large quantity , apply hot
mustard oil on it , the skin will remove easily.
6. • While making Cake , add some Bread crumbs to
the R.Flour , it will make more sponge cake.
7. • While making Dahi Bada add some curd to
ground Daal , it will make Bada very soft.
8. • While making Samosa , add a spoonful of corn
flour to R. Flour it will make samosa very soft.
9. • When Green vegetables are 2 /3 days old , soak
the in lime water for half an hour it will remain
fresh and green.
10. • To protect from separation , before making
KADHEE , add some water to the curd and pass
through a cloth , the Kadhee will not separate.
11. • While making KHEER , when adding sugar to it
add a tea spoon of Besan to it , it will improve
the taste and colour of KHEER.
12. • To make very soft and sponge cake , Add some
drops of honey or Glycerine.
13. • Butter: if butter is getting old , place it in Soda
mixed water for few minutes , it will prevent it
from smell.
14. • Banana: if u hang the bunch of banana then it
will be fresh for a long time .
15. • Add a spoon full of sugar to the MALAI , and
whisk it , u will get more butter then usual.
16. • Chutny : Add a spoon of butter in any kind of
Chutny , it will improve the taste of chutny.
17. • Paneer: To make Paneer soft for a long time ,
cover it with MALMAL cloth and add 5 drops of
vinegar , n put it in a cold place.
18. • Soup: If u r making onion soup the add , a
piece of Paneer to it , it will improve the taste.
19. • Raita : While making raita of bottle guard , dont
through the juice of it , use it to make dough of
roti or in cooking rice . it will give u more
vitamin & Minerals n Taste.
20. • Bada: Add some semolena ( Sooji) in batter , it
will make BADA very crispy.
21. • Makka Roti: To make makka roti easily, add
some “MAAND” ( Boiled rice water) to it , it will
easy to roll roties.
22. • Kachori: To make kachori more crispy add some
curd in R. Flour
23. • Aloo Paranth: Add some besan to filling it will
prevent it from get soggy.
24. • Pakoda: Before serving pakodas, sprinkle some
Black salt powder on it , & feel double the taste.
25. • Rice: To make rice add a tea spoon of oil, few
drops of lemon juice and 3/4 cloves, it will make
Rice more white, shiny .
26. • Vegetables: While making vegetable , after
browning onion , add rest masalas in little curd
mix well and then add to the browned onion, it
will improve taste and thick gravy.
27. • Paneer: To make paneer fresh for a long time ,
take a plastic jaar fill half of it with water, add
few drops of vinegar , close the lid tightly , and
put it in the fridge , it will remain fresh for a long
time.
28. • Tomato: ready to use , Take tomato , make paste
of it, place them in ice tray , freeze them. When
required use 2/3 cubes in gravy .
29. • Green Chutney: Use jiggery, black salt and
amchur , it will be a different taste.
30. • Curd: Use some singhere ka atta , for thick curd.
31. • Ghee: If desi ghee is get old and start smelling ,
warm it with Paan Ka Patta, the smell will
disappeared.
32. • Lemon: To make them fresh , put lemon in an
air tight Dabba.
33. • Gravy: Add some curd if u want to make tasty
and thick gravy.
34. • Sugar Syrup : Grease some butter in the pan ,
before making sugar syrup for transparent
syrup.
35. • Fruits: to cut apple or banana , apply lemon juice
on knife and then cut the fruits, they will not
become black.
36. • To store biscuit , put some sugar in the contener
, it will remain fresh for long time.
37. • Pao Bhaji: when adding butter , add some lemon
juice in butter , n find a different taste of bhaji.
38. • Kabab: When frying kababs , add some rosted
gram flour to it , it will improve taste and shape.
39. • Gulab Jamun: if gulab jamuns are getting hard ,
put them in cooker , tight the lid for few minutes
and heat the cooker, they will become soft .
40. • Soup: While making tomato soup add some
Moong dal to it , it will be a thick and tasty soup.
41. • Ice Cream: when making ice cream add milk
powder in milk , it will be soft and more tasty.
42. • Culiflower: When boiling culiflower ,add some
lemon juice or ½ tsp sugar in it , it will remain
white in colour.
43. • Chilli: If chilli powder is more then the required
in the vegetables, add 2/3 tomato paste in it , it
will reduce the pungency and improve the
colour.
44. • Idli: While making idli , add some fenugreek
seeds ( Methi) in the rice then , make paste , it
will make idli soft and sponge.
45. • Milk : While boiling milk, before putting milk ,
put some water and boil it, then add milk and
boil. It will not coagulate in the bottom.
46. • Tomato Soup: Add 2/3 carrots to the soup , it
will thick, tasty and good in colour.
47. • Kheer: To make thick and tasty Kheer , add
some powdered walnut to the milk, n taste the
difference.
48. Milk : While boiling milk, before putting milk , put
some water and boil it, then add milk and boil. It
will not coagulate in the bottom.
49. • Bhatura: Add bread slice crumbs to the maida ,
it will quick in fermentation
50. • Tikiya: Add some corn flour to the potato paste ,
it will not stick to the tawa and break.
