This document outlines Walter L. Voegtlin's book "The Stone Age Diet" which argues that modern humans would be better served nutritionally by emulating the diets of Paleolithic humans. It describes how humans evolved as carnivores based on anatomical comparisons to dogs. However, the development of agriculture led to diets high in carbohydrates, contrary to our evolutionary heritage. This has led to increased rates of diseases of civilization like obesity, heart disease, and diabetes. The book examines human prehistory and evolution to make the case that humans are adapted to a low-carbohydrate, high-protein diet resembling those of Paleolithic hunter-gatherers.
