12. CAPRESE
INGREDIENTS: oil, salt, basil, origan, tomato and
mozzarella cheese.
PREPARATION: Put a little oil, salt and origan in a
cup to get a marinade. Wash tomatoes and cut them into
slices 1 cm high. Cut the mozzarella cheese into slices
too and put it in a plate in turn with tomatoes. Mix well
the marinade and pour it little by little on the plate.
Then decorate with fresh basil.

36. Macedonian recipes
Salad
„Македонска салата“ (Macedonian salad)
Ingredients:
• 2-3 tomatoes
• 1 onion
• 1 cucumber
• 1 green pepper
• some parsley
• ½ tsp. salt
• 1-2 tsp. of oil
Instructions:
Chop the onion, tomatoes, cucumber, green pepper and parsley.
Put them in a large bowl.
Add the salt and the oil.
Mix all the ingredients well.
Serve and enjoy.

37. Main course
„Тава ориз со пилешки копани“ (Chicken tights with rice)
Ingredients:
• 200 g. rice
• 1 onion (chopped)
• 4 chicken tights
• 2 tsp. salt
• 2-4 tsp. oil
• 1liter water
Instructions:
Boil the chicken tights in the water in a cooking pot until they are well cooked.
Clean and wash the rice under running water (until the water is clear).
Pre-heat the oven to 200C.
Put the oil into a pan and heat until hot. Add the chopped onions and cook for 5 to
7 minutes or until tender, stirring frequently with a wooden spoon or heatproof
spatula.
Add the rice and fry till it gets shiny white (like a pearl).
Add the cooked chicken tights and the water in which you cooked the chicken
(around 750 ml).
Put the pan with all the ingredients in the oven and bake for 30-40 min on 200C
until all the water is gone and the rice is cooked.

38. Dessert
„Тикварник“ (Tikvarnik – meshed pumpkin)
Ingredients:
• 1 medium size pumpkin
• 1 liter water
• 100-200 g breadcrumb
• some milk (around 100 ml)
• 200 g sugar (depending how sweet the pumpkin is)
Instructions:
Peel and chop the pumpkin into medium pieces.
Put them in a cooking pot, add the water and boil until soft.
Drain the pumpkin and mash it up.
Add the breadcrumbs, sugar and milk and mix well. Sprinkle some sugar on top.
Put the mixture into a baking pan and bake for 15 min on 200C (until there is a nice
golden crust on top).
