EDME is an award-winning producer of natural
grain, pulse and seed-based ingredients for the

We have more than 130 years’ expertise founded initially
in the bakery sector, but later extended into a wide range

Our expertise in converting primary grains into premium food

EDME’s mills are located in Mistley on the
picturesque banks of the Stour estuary on
the Essex Suffolk border.The surrounding area
produces some of the highest quality grain in
the country and since the 1880s we’ve been
sourcing raw materials from local growers,
working closely with them to procure the best
- and explore and develop new crop varieties.
Our flours, valued for enhancing flavour, colour
and nutritional content of food products,
are manufactured using specialist milling
systems that provide accurate particle sizing.
This increases functionality and is particularly
important for applications such as batters
and coatings where controlled viscosity in
the finished product is paramount.
EDME also offers a contract milling
service where customer raw materials
can be processed and packed to specified
requirements.
Pulse flours
High in protein and low in fat, pulses are
increasingly used by food manufacturers to
enhance the nutritional benefits of their
products. Pulse flours have a high vitamin,
mineral and fibre content, and can deliver up
to 25% protein.They are processed in a strict
gluten-free environment so that manufacturers
can use them in GF labelled products.

We are specialist millers with an increasingly diverse range of natural
products. From pulses, seeds, grains and malted grains, we produce nutritious
flours for applications across the food industry. Many are gluten-free and
suitable for certified gluten-free products.

In addition to our staple wholegrain flours, we also
mill a range of more unusual specialist flours. These
products are frequently used to increase the nutrient
density of foods as well as enhance consumer appeal.

Made from germinated, kilned and roasted
grain, malt has been used as a natural
ingredient to enhance flavour and colour

Developed for food manufacturers looking for all the goodness and
visual appeal of whole grains but with a soft bite, our WholeSoft
products have created a new category of food ingredients.

Our pasteurised whole kernel soft
grains are amazingly versatile in
their usage.They add nutritional and
dietary value to products ranging
from fresh salads, yoghurts and soup
to meat pies and ready-meals.They
also provide visual and textural appeal
to breads and other baked products,
adding a succulent soft chewing
quality.The fact they don’t compete
for water in dough based systems
means a finer crumb structure, better
moisture retention and improved
keeping qualities.
There are two categories of
WholeSoft products: Original
and Sprouted.
Both have been through a stabilisation
process resulting in products that are
microbiologically, enzymatically and
physically stable.This ensures that
they are equally as good in ready to
eat applications as in foods that are
going to be further cooked or baked.

WholeSoft Sprouted are grains, seeds or
pulses that have been carefully germinated
and then stabilised. The process preserves
the sprouts and natural sweetness that
develops during germination, creating a
product with immediate consumer appeal.
WholeSoft Sprouted are ideal for ready
to eat applications.

  • 5. 5 EDME’s mills are located in Mistley on the picturesque banks of the Stour estuary on the Essex Suffolk border.The surrounding area produces some of the highest quality grain in the country and since the 1880s we’ve been sourcing raw materials from local growers, working closely with them to procure the best - and explore and develop new crop varieties. Our flours, valued for enhancing flavour, colour and nutritional content of food products, are manufactured using specialist milling systems that provide accurate particle sizing. This increases functionality and is particularly important for applications such as batters and coatings where controlled viscosity in the finished product is paramount. EDME also offers a contract milling service where customer raw materials can be processed and packed to specified requirements. Pulse flours High in protein and low in fat, pulses are increasingly used by food manufacturers to enhance the nutritional benefits of their products. Pulse flours have a high vitamin, mineral and fibre content, and can deliver up to 25% protein.They are processed in a strict gluten-free environment so that manufacturers can use them in GF labelled products. Developed for food manufacturers looking for all the goodness and visual appeal of whole grains but with a soft bite, our WholeSoft products have created a new category of food ingredients. E D M E W H O L E S O F T ™ O R I G I N A L Our pasteurised whole kernel soft grains are amazingly versatile in their usage.They add nutritional and dietary value to products ranging from fresh salads, yoghurts and soup to meat pies and ready-meals.They also provide visual and textural appeal to breads and other baked products, adding a succulent soft chewing quality.The fact they don’t compete for water in dough based systems means a finer crumb structure, better moisture retention and improved keeping qualities. There are two categories of WholeSoft products: Original and Sprouted. Both have been through a stabilisation process resulting in products that are microbiologically, enzymatically and physically stable.This ensures that they are equally as good in ready to eat applications as in foods that are going to be further cooked or baked.
