This document provides recipes for healthy summer dishes. The first section lists ingredients for cold salads including lettuce, tomatoes, cucumbers, and olives that can be served with additions like legumes, pasta or rice. Another salad uses tomatoes, peppers, onion, oil, vinegar, salt and garlic. Melon and serrano ham are also suggested. The second section describes main dish recipes like fish and roasted potatoes, cuttlefish cooked with garlic and parsley, bread with tomato and Spanish omelette made with eggs, potatoes and onion, and stewed beef cooked with vegetables, oil, tomatoes and potatoes.
