For the shortcake:
-225g self-raising flour
- I teaspoon baking powder
-50g butter or margarine
-25g caster sugar
- I medium egg
- 5 tablespoons milk
-Half a teaspoon of vanilla essence
-extra milk, for brushing

For the filling:
-225g of strawberries.
-150ml (¼ pint) double or whipping cream
-3 tablespoons greek yogurt
-icing sugar
4. Method
Heat the oven to 220º C. Next, put some butter
in a baking tray.Then, sift the flour and baking
powder into a large bowl.
5. Cut the butter into the small cubes. Add the
cubes to the flour. Then, move the mixture with
your fingers.
6. Stir in the caster sugar and make a hollow in
the middle of the mixture with a spoon.
Then, break the egg into mug and stir it with a
fork, to mix the white and yolk.
7. Stir the milk and vanilla into the egg. Then, put
the mixture into the hollow. Mix all the
ingredients.
8. Sprinkle a clean work surface with a little flour.
Next, make a ball with your hands and squash.
9. Roll out the dough and make a circle. Lift it into
the baking tray and brush it with milk.
10. Bake the shortcake in the oven for 12-15
minutes. Meanwhile, wash the strawberries and
cut them into thick slices.
11. Take the shortcake out of the oven. When the
shortcake is cool cut it with a knife on half.
12. Cut the top layer into eight wedges. Then, put
the cream into a bowl. When the cream is thick
whisk and mix with the yogurt.
13. Spread half of the mixture over the half of the
shortbread. Then, lay the strawberry slices, all
over the cream.
14. Spread the rest of the cream over the
strawberries. Lay the eight shortcake wedges
on the top. Finally, sift icing sugar over the top,
of the shortcake.
