The study follows the evolution of olive oil mills in chronological order, in the area of Greece and all over the world, and is based on bibliographic, online sources and also on close up looks and meetings with people owning such facilities.
The conclusions occurring from the research and comparison between olive mill units are distinctive between the Greek and the European ones.
In modern Greek units, most of the changes -interventions or improvements- relate to better mechanical equipment that are equivalent with better safety and hygiene conditions.
However, the changes are limited to the main productive part which refers to the employees, the transporters and other executives.
On the contrary, in most European countries, modern olive mills are designed to comply with bioclimatic architecture and have the functionality and establishments to operate as a: • Museum
• Walking site
• Cultural and educational space
• Place to welcome entertainment activities
• Business activities’ holder
