Stockbox Grocers is a startup that aims to address food deserts by operating miniature grocery stores housed in shipping containers. The containers are placed in neighborhood parking lots for easy access. They stock over 300 fresh and staple food items at affordable prices. Two MBA students started the company with funding from grants and a Kickstarter campaign. An initial prototype store operated for 8 weeks in Seattle to test the concept. The founders plan to open more permanent stores in Seattle neighborhoods lacking grocery options by the end of 2012.
