This document compares the acidity levels of different tomato products, finding that tomato sauces have higher acidity than fresh tomato juice due to preservation processes. Specifically, Kissan tomato sauce has an acidity of 2.05% and Surabhi tomato sauce has 4.41% acidity, while tomato juice only has 0.157% acidity. While tomatoes are generally alkalizing, their preserved sauces become more acidic and should be consumed in moderation by those seeking to reduce acid intake.
