Recipe for Ridge Gourd Masala
There is a common misconception that tasty food cannot be healthy. And moreover some non-
vegetarians have a perception that veg food are utterly dull and boring. Though I myself is a non-
veg, but I thoroughly enjoy veg cuisines when they are cooked in a tasty way. Today I would like to
share a very tasty recipe made out of an utterly dull and bland vegetable, ridge gourd. I was never a
lover of ridge gourd because of its blandness. Some days back, I hit upon a food blog and came by
an absolutely tasty recipe made out of the vegetable. I have made some alterations in the recipe to
suit my bong taste buds and believe me since then I have been making it every alternate week. Lets
check the recipe-
Ingredients-
Ridge gourd- 2
Potato- 1
Onion- 2
Tomato-2
Red Chilli powder- 2 tsp
Green chilli- 2 chopped
Turmeric powder- 1 tsp
Cumin powder- 1 tsp
Coriander powder- 2 tsp
Kasoori methi- 1large pinch
Salt- As required
Coriander leaves- 2 tbsp chopped
Oil- 1 tbsp
Whole cumin- 1 tsp
Procedure-
 Peel off the ridge gourd and potato and chop it into small pieces. Take care such that the
ridge gourd and potato should be of appprox. same size after chopping.
 Chop the onion, tomato, green chilli, and coriander leaves.
 Heat oil in kadhai and splutter the cumin seeds.
 Add onion and saute the till translucent.
 Add tomato and salt. Give it a stir and wait till mushy stirring once or twice in between.
 Once the tomatoes are mushy add red chilli powder, turmeric powder, cumin powder,
coriander powder and kasoori methi. Mix well.
 Once the raw smell of the spices leaves, add potatoes and ridge gourd.
 Give it a stir and cover. Ridge gourd leaves a lot of water. So do not add water before.
 Check after about two minutes. The gravy must coat in the veggies.
 Then add half a cup of water and again cover and cook stirring once or twice in between.
Cook till the potatoes are soft and mushy and are given into the gravy.
 Add green chilli. Mix well and finally sprinkle the coriander leaves after switching off the
flame.
And there you go. Utterly tasty masala curry made out of a bland vegetable. Serve it with rice or
chapati or even paratha, it just tastes equally delicious.
The recipe is sounding so delicious that I am sure you are almost drooling over it. But the problem
is time. Yes, in our daily work schedule we hardly get enough time to cook and have to depend
