What to do:
Preheat oven to 200°C / 180°C (fan-forced)
Combine breadcrumbs, fresh herbs, rind & Grana Padana in
a medium sized bowl.
Melt butter in a small frying pan and pour into the bread-
crumb mixture. Combine mixture until it holds together when
pressed.
Prepare an oven tray covered with a sheet of baking paper.
Brush each cutlet with olive oil. Press the breadcrumbs on to
each cutlet and placed them on the oven tray. Lightly drizzle
olive oil over the cutlets and place on the oven.
Roast uncovered for 15 minutes or until cooked as desired.
Serve with baby squash, fennel and feta salad and top lamb
with almond & mint pesto. *

Preparation time: 45 minutes

What You Need:
8 lamb cutlets from the Free Range Butcher
1 cup of stale breadcrumbs
¼ cup of roughly chopped parsley
¼ cup of finely chopped mint
2 teaspoons of finely grated lemon rind
½ cup of grated Grana Padano
30g butter
Olive oil

What to do:
Mix the meatball ingredients (preferably with your hands),
adding the breadcrumbs last. Heat a heavy based fry pan over
medium high heat, add 2tbps olive oil and then just enough
meatballs so that you can comfortably turn them. Depending
on the size of your pan you may need to do them in 1 or 2
batches. Fry the meatballs on all sides until they are brown,
transfer to a plate and keep warm.
Heat 1tbsp oil and add onion and cook stirring for 3-5 minutes
until softened. Add garlic and mushrooms and cook stirring
for 5 minutes until mushrooms are tender. Sprinkle flour into
pan and stir for 1 minute. Add stock, cream and mustard and
stir until well combined. Reduce heat to medium-low and
simmer until sauce thickens. Return meatballs to pan, add
parsley and season with salt and pepper. Cook for 2 minutes
until meatballs are heated through. Serve with penne pasta
and steamed broccoli. *
Italian Pork Meatballs
with Creamy
Mustard Sauce
Preparation time: 45 minutes
Yield: 4 people
What You Need:
500g Free Range Pork Mince from the Free
Range Butcher
1/3 cup Parsley, chopped
1 Egg
½ cup Fresh Parmesan
¼ cup Bread Crumbs
2 Cloves Garlic minced
1 Tspn Olive Oil (plus 3tbsps more for frying
and the sauce)
Salt & Pepper
Mushroom Sauce
1 small red onion, finely chopped
2 gloves garlic, crushed
250g button brown mushrooms, thinly sliced
1 tablespoon plain flour
1 cup chicken stock
300ml pure cream
2 tablespoons wholegrain mustard
2 tablespoons parsley, chopped

What to do:
Melt the chocolate in a very dry bowl set over boiling water –
make sure you don’t let any water come into contact with the
chocolate. Once melted, remove from the heat and set aside
for about 3 minutes to cool slightly.
In another bowl, whisk the thickened cream until soft peaks
form. Whisk the egg yolks into the melted chocolate and then
whisk in ground vanilla beans a good shake of chilli powder
and half of the cream until well combined. Using a large metal
spoon, carefully fold in the remaining cream, working quickly
to retain the airy texture.
Pour the mousse into six glass jars leaving room to later add
strawberries and cream. Place in the fridge for about 3 hours
or until set. You can make this a day in advance if you like.
Just before serving, cover the top of the mousse with whipped
cream and chopped berries of choice. *

how often are you eating your food and you’re either looking
at your phone or the TV? The truth is, this is more like the
end of the line when it comes to presence with our food. Let’s
start at the beginning. When we are truly present to our food
we make conscious decisions about where our food is coming
from, how it is prepared and the impact we have on our planet.
We become committed to cultivating good health not only for
ourselves, but our families and friends and the community.
Making conscious decisions about our food choices and being
fully present when we eat is not about eating ‘good’ food or
‘bad’ food. It’s about bringing into alignment the best of what
you know and committing yourself to learning more so that
you can really experience food and really experience your
loved ones and yourself.
To me eating seasonally is a big part of being present to my
food. When we eat seasonally and locally we respect our
environment, we become aware of our local farmers and you
know what? The food just tastes better.
This month I have prepared a recipe that speaks true to all of
this. Asparagus is one of my favourite spring vegetables plus
it’s packed with nutrients. It’s a great source of fibre, folate
and vitamins A, E and K. And this salad is perfect to share with
your loved ones. When we prepare food together and share
food together we feed our souls. So above all else, always be
fully present to each other and the food in front of you and in
doing so you will experience real moments.

What to do:
Bring water and a large pinch of sea salt in medium sized
saucepan to the boil. Cut the lemon in half and put half the
lemon into the water. Stir in the farro, then turn down heat
to a simmer, and cook for about 20 minutes until tender.
Meanwhile, mix together lemon juice freshly squeezed from
the other half of the lemon, dijon mustard and a pinch or
two of paprika in a small bowl. About 3 minutes before the
farro is done add the peas and asparagus to the simmering
pot. Simmer with the farro together with the vegetables. You
want them to be a bright green colour. Poach the eggs for 3-4
minutes so the yolk remains gooey and soft. Drain the water
from the farro and peas (and remove the half lemon). Add the
asparagus into the pot and gently mix in the dill. Whisk a good
glug of olive oil into lemon mixture, then season to taste with
sea salt and freshly ground pepper. Pour the dressing over
farro mixture and gently stir to combine. To serve, divide the
farro mixture into 2 bowls and top each with a poached egg.
Season with paprika, freshly ground pepper and dill. *
Preparation time: 45 minutes

If the squiggly umlauts over the vowels aren’t enough to tip you
off, the decadent and delightfully curly pastries and cakes in
the window should give you an indication that this is not your
average bakery. Vivacious and bold, Kürtosh has effortlessly
side stepped the cookie-cutter mould of a traditional bakery
and has turned the expected on its head (and rather deliciously
at that).
Growing up in a family passionate about beautiful food Ben
moved here from Israel 10 years ago (where his grandparent’s
bakery of 46 years is still going strong). Upon moving to
Sydney his interest in the cafe scene flourished, igniting his
love for coffee, which he now describes as “One of my greatest
passions”.
Beginning with the concept in Randwick back in 2011 his
premise was simple “Homemade recipes that Grandmother
and Mum would make.” As for the Kürtosh- a traditional
Hungarian chimney shaped cake and namesake to the
business – he recalls what drew him to this as its centrepiece.
After visiting Hungary and buying one of these treats from
the street-cart of a lovely, older couple he was drawn in by
the theatre and experience as they prepared it before him;
and describes unfurling his delicious treat and eating it as
he walked through streets. One of his favourite memories,
this experience was one he wanted to share with Australia,
and has become the feature of his business today. Since then
Kürtosh is now home to 5 locations (each unique in their own
right) and all kürtosh pastries are prepared front-of-house,
before the customer, just as it was done for him.
Indeed, with its curved glass shop face entry the Crows Nest
venue has also kept and embraced many elements of the
original design. The building, like their fare, has character
and history. With its striking fusion of old and new, exposed
piping, high ceilings and traditional influences; the space is
warm, inviting and edgy. Deep, earthy colours combine with
industrial touches to create a welcoming, rustic charm; and
a serious barista’s station to the rear sits as a testament to
Ben’s passion for coffee.
If this doesn’t captivate you at a visual level the mouth-
watering smell will. Hot sugar, warm butter and the lightest
scent of cinnamon combine with the aroma of melting
chocolate; whilst behind the glass cabinets lies a veritable
feast. With everything from dense slices and teacakes to
cheesecakes and pastries, the selection features both modern
and traditional options with an imaginative twist. Everything
is baked onsite and the menu is kept fresh with seasonal
changes and the ongoing collaboration of their diverse team of
bakers. Although catering to those wanting a savoury fix, their
true focus is on sweets and- with the unique offering of selling
by weight rather than slice- it allows one to feel justified in
a number of different selections and encourages the curious
palette.
At only 28 Ben is humble, innovative and clearly ahead of his
time. Passionate, and with heart behind what he does, he
explains “I’ve given a lot of love and got a lot of love back.” And
as for sampling the product himself? He grins. “There’s not
day that I don’t eat cake.” Energetic, bright-eyed and clearly
inspired, he’s obviously doing something right. *

Taking over a twenty-five year old business would be
a daunting thought for anyone; especially a business thats
very survival relies heavily on culinary techniques that take
years to acquire and a great deal longer to master.
Enter courageous local husband and wife team David and
Nicole Landgrebe. Which one is the pastry chef you say?
David’s background was in Structural Landscaping and
Nicole an Artist and Visual Merchandiser, both with a list of
impressive projects under their belts.
David explains that on day one he realised the irony of
swapping bags of cement for lifting bags of flour! Whilst
Nicole applied her creative skills to rebranding and breathing
new life in to a dated interior, David headed straight to the
kitchen. To take over the reigns he had a three-week induction
with the previous owner Eric, where he quickly had to learn
how to not only make a huge selection of different pies but
also the delicate intricacies of puff pastry needed for the apple
turnover- a long standing crowd favourite. As David explains
the process, he notices my shocked expression and slightly
broken heart, as he reveals that puff pastry has ninety layers
of butter!
Surely this can’t be true? It’s so light and fluffy and adorable
looking. David, say it aint so!
Whilst enjoying a very nice cup of Mio coffee I noticed
customers pour in the door. One after another Nicole warmly
greets each by name and knows their order before a word is
spoken. Local customer ‘Wes’ comfortably strolls in “I’ll have
the usual suspect thanks Nicole”. Looks like Brooky Pies is in
good hands and set to for a successful future ahead. *

New Leaf
Nursery
If visiting a garden centre doesn’t sound like an exciting day out,
you’re in for a surprise. New Leaf Nursery opened in Ingleside
six years ago and it presents as a joyful, quirky, relaxing
abode. You won’t find concrete pathways; instead, mulch and
pebbles form a meandering trail through the property and the
sounds of roosters and clucking hens transport you a world
away from suburban Sydney.
The place looks like it’s been pieced together organically by
hand using recycled pieces of tin and wood - and indeed it has.
New Leaf is a labour-of-love conceptualised by 40-year old
Daniel Yakich who has utilised old building products and other
finds to create a raw, natural environment which looks like it’s
been set back in another era.
Inspired by his childhood and the son of two teachers,
Daniel fondly remembers gardening with his father and he is
passionate that children grow up understanding where their
food comes from. He wants to teach both children and adults
that it’s easy to be sustainable and self-sufficient and to be
hands-on and enjoy your garden.
The independently-owned nursery is different each visit
with Daniel stocking both what his customers want and
also ensuring there’s plenty of less usual plants such as
medicinal herbs. You also won’t find fancy labels and some
plants are even in second-hand pots. This provides a fantastic
opportunity for customers to talk to the knowledgeable staff
and to experiment with what grows best in their garden.
This ethos also ensures that the nursery remains focused on
well-priced, horticulturally-sound, sustainable planting.
But it’s not just about the plants, New Leaf has a wonderful
range of chickens, ducks, guinea pigs and rabbits for sale,
alongside feeding and housing options. The popular chickens
are a wonderful source of eggs for the table and fertiliser
(manure) for the garden and they are available both as day-
old chicks or point-of-lay hens. There’s also a wonderful
petting zoo where kids can wander around with fuzzy bantam
chickens and cheeky rabbits.

Here on the Northern Beaches the breaking of dawn is a calm
and tranquil time of the day. The coastline is empty, the streets
are still and most people are comfortably asleep in their beds.
Not so for Dee Why local and seascape photographer, Sandi
Edwards, who is awake and poised, camera in hand, ready for
the moment when the sun appears on the horizon; as she has
done every day for over 10 years.
Launching Sunrise by Sandi back in 2000 Sandi has remarkably
captured every sunrise since 2004, literally rain, hail or
shine. Featuring an extensive and striking collection these
spectacular images become unique gifts to those wanting to
keep a small piece of the beginning of the day that holds great
personal value. Some are based on a wedding or birth date,
some personal, and some a tribute to a life. Whether poignant,
celebratory or commemorative Sandi sees capturing the
start of a day that holds significant meaning as an honour and
a privilege.
With an alarm clock dictated to by when the sun rises, her
average wake-up call is 4.30am. A self-described early
riser she laughs when asked what time she goes to bed and
deflectively grins, explaining she is “definitely a morning
person.”
Shooting at beaches all across Sydney the location is often
determined by a particular commission (for example a couple
getting married that day may request the place where they
met). Otherwise Sandi will decide this herself. Regardless
of setting however, she always finds this time valuable and
rewarding, remarking that “Every new day speaks to me”.
To her the sunrise is a constant, despite life’s adversities,
and each photo is imbued with meaning. “You can see the
day awakening.”

The results are picturesque and captivating, ethereal and

Instagram Sandi has met some fantastic local photographers
who admire and follow one another’s work, and has
subsequently had some incredibly rewarding collaborative
shoots with local artists.
Drawing on inspiration from mentors including Wollongong
local landscape/seascape photographer William Patino ( “His
work comes to life”) and internationally renowned landscape
photographer Ken Duncan, Sandi wishes to inspire the hope
and the symbolism that these sunrises have brought to her
own life, and share it with others. She explains her heart
behind her images “There will come a new day, and it may not
be now but it will come for you. That’s why I do it.” *

variables. When two people decide to unite in love and become
a couple, creating the most amazing and wonderful special
day to be remembered is something dreams are made of.
“When my husband and I were first engaged, I knew, that when
planning our day, it was going to be a simple, relaxed, coastal
experience.” Says Briohney Anderson from Copper Beech.
“The ceremony location, style, feel and of course the flowers
were all elements I wanted to be perfect, I found it was a way of
expressing myself, my taste and my love of coastal elegance.”

where and how this amazing day was going to unfold but
getting the finer details right was still an immense task, yet
rewarding achievement.“
DO YOUR HOMEWORK
Some couples can be left overwhelmed with the number of
beautiful venues, talented photographers, cake makers and
creative florists they have to choose from. Both Briohney and
Debbie believe that putting your thoughts on paper is a great
way to start. If possible, start a Pinterest account and start
pinning ideas and styles to boards. It really is easy and once
you get started, it can be hard to stop. Flick through magazines
if you prefer and start collecting images. Over time a style and
theme will rise to the top and remain strong.
LOCATION
Debbie recommends choosing your ideal ceremony location
and reception venue first. When choosing the ceremony
location, many factors can take precedent. It may have
sentimental value and be meaningful to your family, or
a ceremony location may just suit your style. If you are
looking for some inspiration, Debbie suggests taking a look
at WedShed. With just over a year in the making, they are
an online platform exclusively designed to give you access
to hidden locations. Amy & Mel from WedShed have made
a living out of building a business around exactly that. Amy
says “We use the word ‘venue’ loosely – our spaces range
from woolsheds to warehouses and everything in-between.”
Also, “You can discover amazing places that allow you to bring
in personal touches and make the venue a true reflection of
you.” Debbie goes on to say “This service enables couples to
bring with them specialists in the industry, and being given
the opportunity to create beautiful florals at an individual
destination is a wonderful experience.”
RECOMMENDATIONS & ADVICE
A recommendation can be worth its weight in gold. Many
venues have preferred suppliers that have styled or worked
with the location before. They understand what works and
what works well. It’s not to say that every wedding should be
the same, as unique weddings are what challenges creative
spirits and generates a fresh approach and outcome.
Lastly, Briohney suggests, “Listen and be open minded to
advice given.” Seasonality and availability can dictate choice,
but not necessarily change the look and feel of your day.”
Briohney goes on to say “As an experienced floral stylist,
some of the most beautiful weddings I have created have been
the ones that the bridal couple have entrusted me with full
creative vision.” *

Declutter
for spring
Spring is a time of renewal! With the season of spring comes
the need to clean, refresh, renew and declutter. Mess and
chaos is one of the top turn offs for buyers. If you are thinking
of selling anytime soon, now is the right time to start your
home declutter and prepare your home for the spring market.
I have my tops tips to get you started!
1. Look beyond what your eye can see.
Clutter has a habit of hiding everywhere. In corners, under
beds and on shelves. A prospective buyer will open cupboards
and storage spaces. Empty out half of the contents, clean and
organise, especially in kitchens and bathrooms. This enables
a buyer to see potential storage and space.
2. Sort things into categories: have 3 boxes ready.
a. things moving with you to your new home
b. things to donate to charity
c. things to throw away
My theory with sorting is: if you haven’t worn it, eaten it, or
read it in a year, its time to let it go.
3. Store all personal items away.
Photos frames, small trinkets, items of value and family
heirlooms. Leave out only lovely neutral tone decor items
for decoration on shelves and coffee tables. Potential buyers
don’t want to see your family photos on the wall. They want
to imagine themselves living in your home. Make this easy
by creating a neutral photo free home. Store all your personal
hygiene products away from bathrooms shower recess,
and benchtops.
4. Teenage posters and children’s toys.
They are not effective property presentation. Pull them down,
and store away all colourful toys and children’s accessories
such as highchairs and play pens.
5. Store any extra furniture.
Store those extra piece that crowd a room, you need to make
the home feel spacious and large, not cluttered and full. Space
is everything is a buyer.
Finish off by styling with some beautiful simple pieces to
create athmosphere: fresh Spring flowers, colourful cushions
on lounges and beds, throw rugs and burning a nice scented
candle and finally, it’s all about creating a space that connects
with your buyer. Creating a clutter free organised home
attracts positive visual attention, interest in potential buyers,
and a beautiful feel. *

EXPERIENCE
When the generous team at McCarroll’s extended an invite to
their Maserati Drive Day experience I couldn’t type my RSVP
quick enough. Since watching ‘Gabrielle’ from Desperate
Housewives pull up in her black Maserati Spyder and look at
Carlos with shear contentment, I have secretly held a longing
to one day enact that very moment.
Drive Day arrived and as I comfortably sunk into the soft
leather seat and gripped the steering wheel, things became
very real. I started to think of things I would have to sell if
I happen to clumsily back it in to a parking meter or hit one
of the four Maserati’s travelling in a convoy in front of me.
I assured my hesitant passenger Oscar that I’ve been driving
for over fifteen years and never had an accident. This was
more of a motivating affirmation for myself than Oscar.
After an internal Anthony Robbins-esque encouragement
I pulled on to a picturesque stretch of road leading down
to Akuna Bay; accidentally indicating with the windscreen
wipers. The distinct roar of its engine and the power behind
this high performance yet elegant engineering achievement
is unbelievable; it does strange things to a person. Suddenly
I was shrieking like a fifteen-year-old girl at a Justin
Bieber concert. And If I thought the day couldn’t possibly
get any better, we were then treated to a beautiful lunch at
Freshwaters Ristorante Pilu.
If ever there was an incentive to work hard and save harder
here it was…. in all of its Italian motoring glory. *

On Saturday April 18, this year, Lee Ferrier was involved in a motorcycle accident after
watching his stepson Nixy play rugby league for the Narrabeen Sharks. In the accident,
Lee severed his spine and it was immediately confirmed on MRI that, miracles aside,
he would be a paraplegic. A fundraising night will be held on Saturday 10th October at
the Cromer Community Centre. The event will consist of food, drinks, music, games,
entertainment and most importantly, a raffle and auction. The fund raising team are
seeking product donations to include in the raffle and auction. Alternatively, donations can

Australian designer, illustrator, muralist art director and
writer of comics from Freshwater, Sydney. Brents work is
expansive, diverse and always interesting.
He recently spent few days working on a rooftop mural at
Westfield Miranda in Sydney. Featuring signature elements he
created this colorful mural adding some warmth to the cold
winter Sydney days and nights.
Spending couple of day on a chairlift Brent used mostly
spraycans to paint this vivid piece. Including patterns, comic
elements, typography and familiar imagery such as plants,
fruits, waves, etc, the piece definitely adds a new spirit to
the former sterile rooftop. By addition of grey and dark tones
Brent managed to blend the piece with the dull concrete
environment making it nicely pop out from all the greyness. *
