Tripe soup, or shkembe chorba, is a traditional Bulgarian dish that is commonly eaten as a main meal. It is made by boiling tripe pieces in water for 30 minutes, then thickening the soup with a paste of butter and flour and adding eggs beaten with yogurt. The soup is flavored with mashed garlic, vinegar, black pepper, and chili peppers. Though it may not sound appetizing, tripe soup is delicious and often served with toast as a warm, filling meal in Bulgaria.
