Ingredients for pepper and cod salad
Green pepper, 300 g Red pepper, 300 g Yellow pepper, 300 g
Onion, 300 g Cod, 200 g Extra virgin olive oil
Black pepper Salt
01: Roasting of peppers and onions
To start preparing this pepper salad the first thing we must do is roast the
peppers and onion. So, first of all, we have to put the oven to preheat to 180ºC
with heat up and down. Once we have the oven running, the next thing we
must do is wash the peppers and onions very well with cold water.
Next, we will put them on a tray suitable for the oven and with a brush we
will paint the vegetables with a little extra virgin olive oil, we will also add a
little salt.
We will put the tray with the peppers and the onion in the oven, which we
will lower to 160ºC. They will take about 40-45 minutes to roast.
02: Cod cooking
The first thing we have to do is dry it well with absorbent kitchen paper.
We will cut a piece of aluminum foil and put the cod on top to make a small
package. With a brush we will paint the cod with a little extra virgin olive oil
and add a little pepper.
Once with the oil and black pepper, we will fold the aluminum foil around
the cod as if we wrapped it and we will make a small package that we will place
on a tray suitable for baking. We will reserve until we have the roasted peppers
since it will be done with the residual heat of the oven.
03: Preparation of roasted vegetables
Once the 40-45 minutes have passed, we will have the peppers and the
roasted onion. We will take it out of the oven and let it temper.
Once tempered, we proceed to peel the peppers and remove the seeds
inside. The onion will also be peeled. Next, we will cut all the vegetables into
thin strips.
04: Preparation of cod
When we take the peppers and onion out of the oven it will be time to stop
the oven and put the packet with the cod inside, which will be done with the
residual heat of the oven in about 8 minutes.
Once this time has passed, we will take the cod out of the oven and open
the package. From the cod we will get two parts: the loins of the cod and the
juice that has been released from cooking.
05: Preparation of the dressing
With the juice that has been released from the cooking we will make the
dressing for the salad. We simply have to emulsify the juice a little with a fork
and add extra virgin olive oil.
Plating and final result
Now that we have everything prepared, we only need to assemble the dish;
We will arrange the peppers and onion in a dish or dish, add the pieces of cod
and finish adding our dressing.
