Development of Rosemary Induces Green Tea
The study of physiochemical properties of fresh Rosemary leaves powder and also the preparation of tea from standard green tea. Powder of Rosemary leaves is prepared by sun drying for duration of 3 4 hours, followed by grinding into fine particles size. Dried leaves are subjected to proximate analysis. Dried leaf powder reveals a moisture content of 6.41 , total ash at 5.52 , and crude fiber at 25.19 . The physicochemical properties disclose that sorbic acid is absent. Three formulations T0, T1, and T2 were created by varying the amounts of rosemary leaves 1.45gm, 1.50gm, and 1gm green tea ratio 1.45gm, 1gm, and 1.50gm rosemary green tea T2 was accepted on the basis of sensory characteristics like taste, texture, and flavor and overall acceptability. The selected sample was assessed from proximate analysis and microbial tests. Abstract
The aim of the current study was the comparative analysis of the physical, biochemical and antioxidant properties of Mustard, Litchi, and Nigella honey. The physical parameters include the mean moisture content of Mustard, Litchi and Nigella honey were found 14.32%, 15.27%, and 14.12% respectively; PH content were 6.97, 5.8, 4.78; the TSS content were71%, 70%, and 73% respectively. The biochemical parameters including protein content were 1.103%, 0.57% and 0.985%; mean ash content were 0.2%, 0.19%, and0.188%, total carbohydrate content were 84.377%, 83.97% and 84.496% and the minerals contents Na were 539.238 ppm, 424.3565 ppm and 588 ppm; K were 239.216 ppm, 219.017 ppm and1063.774 ppm; Ca were 1710.499 ppm, 611.4852 ppm and 75.4 ppm for the Mustard, Litchi and Nigella honey respectively. The Antioxidant properties such as polyphenol content were found 42.572 ± 0.00529 mg gallic acid/50 ml, 30.625 ± 0.00529 mg gallic acid/50 ml and 95.5 ± 0.00529 mg gallic acid/50 ml; flavonoid content were found 1.052 ± 0.000577 mg catechin/50 ml, 0.6 ± 0.000577 mg catechin/50 ml and 2.66 ± 0.000577 mg catechin/50 ml and vitamin C content were 0.41 mg/100ml, 0.63 mg/100ml and 0.7 mg/100ml for Mustard, Litchi and Nigella honey respectively.

Ayurvedic formulations are mainly administered by oral route, and most of the orally administered. Ayurvedic formulations belong to liquid form of drug. Polyherbal energy drink was prepared by using some traditional herbs having proved nutritional potential. The ingredients were selected as Amla, Liquorice, Ashwagandha, Tulsi, and Mentha. The prepared polyherbal energy drink was evaluated immediately after preparation. The analysis of prepared drink found to contain optimum level of pH. The developed herbal energy drink provides good taste combined with potential health benefits. The prepared drink is potentially capable to replace the synthetic drinks available in the market. For example, black gram, which has higher methionine content, has been bred with mungbean to improve its protein quality. The Rchit gene has also been transferred via Agrobacterium to increase protein content in pigeonpea. These approaches show promise for enhancing the nutritional value of pulses.

Key objectives include utilizing whey and skim milk from dairy by-products in new foods, developing technologies for composite dairy foods like complementary foods and probiotic milk-cereal mixes, validating the health benefits of these foods, and assessing commercial viability. A consortium of partners will work on formulation, processing, nutritional analysis and consumer testing of the new dairy-composite foods to address malnutrition and promote underutilized crops.
Development of Nachos using Moringa Oleifera Drumstick , Zea Mays Maize Flour...
The Department of Food Technology, Parul Institute of Applied Sciences, Parul University, Vadodara, Gujarat, conducted the nachos study. This study demonstrates the health advantages of drumsticks, and its main objective is to create nachos that can be enjoyed by people of all ages using the same ingredients. Drumsticks contain a lot of vitamins and have antioxidant effects. For the creation of Nachos, three formulations with a control sample were created. Drumsticks were used to make nachos, they were first boiled, then chopped up, blended into a paste, and then added to boiling water with salt, baking soda, quinoa flour, and rice flour. Garlic powder, black pepper powder, and spices like chili powder for improved taste and flavor, nachos were additionally seasoned with onion powder, chat masala, and mix herbs. During the creation of the dough, different amounts of drumstick paste 20 , 30 , and 40 were added. The dough was first made into tortillas, and then it was further fried. To manufacture nachos, different formulations were prepared. The developed nachos underwent additional testing for microbiological analysis, physio chemical characteristics, and sensory evaluation. The nachos had an energy value of 534.27kcal, 2.08 moisture content, 4.84 ash content, 6.91 protein content, 53.78 carbs content, and 2.08 fat content.
