This document introduces an exceptional Spanish wine called Palomero produced from 70-year-old Tempranillo vineyards in Ribera del Duero. The grapes are macerated for 28 days before aging for 30 months in French oak casks, producing a smooth, rounded wine. Only 9,900 bottles of this reference wine are produced each time. The bottles are stored in a hidden, peaceful cellar near the Monastery of San Pedro Regalado until sale.
