INTRODUCTION
 Meat sector in India plays an important
role in providing livelihood to rural people
in the country. Animal slaughtering not
only provides meat but also valuable
byproducts to the mankind.
 Meat industry can be made more
competitive if byproducts are effectively
utilized.
 It has been estimated that sale of
byproducts such as skin ,pluck ,head ,gut
etc. can recover about 30% and 35% of the
live animal prices of goat and sheep
respectively.
Offal, also called variety meats, any of various nonmuscular parts of
the carcasses of beef and veal, mutton and lamb, and pork, which are
either consumed directly as food or used in the production of other foods
 In nutritional terms,
several variety meats are richer in certain vitamins, minerals, and forms
of protein than muscle tissue
e.g= calf’s liver, is a major dietary source of iron,
What is Offal means?
Imports of Meat & Edible Meat Offal in India increased to 1.11 USD
Million in 2021 from 0.36 USD Million in 2020
Exports of Meat & Edible Meat Offal in India decreased to 398.76 USD Million in
2020 from 2322.82 USD Million in 2019

(A) CLASSIFICATION OF ANIMAL BYPRODUCTS ACCORDING TO USE AS A FOOD
EDIBLE BYPRODUCT - Includes liver , kidney , heart , brain , intestine,
blood ,thymus gland(sweetbread), tongue, spleen, caul fat, back fat ,
leaf fat etc
INEDIBLE BYPRODUCTS - Includes hides and skin , ear , lips , snout , gall
bladder ,foetus ,hoof, horn, hair, bristles , condemned meat etc.
OFFALS AS A FOOD/DISHES
1)BLOOD-
1. Soondae (South Korea)
Having animal blood incorporated
into food is nothing unusual if you are
of Asian descent. South Korea, like
other Asian countries, enjoys blood in
various shapes and forms, with
soondae being its most popular blood
dish.
 It is served with glass noodles and
glutinous rice mixed with pig blood,
all stuffed into pig intestines.
2. Blodplättar (Sweden and Finland)
Blood pancakes.
This dish seems quite
ordinary until the recipe calls for a
gallon of cow blood instead of
milk.
3. Drisheen (Ireland)
Drisheen is black pudding, or
blood sausage, a common
breakfast item in Ireland.

Sunjiguk which means
hangover soup, that uses
coagulated pig blood as its
main ingredient.

C and so the iron in it is easily
absorbed by the body. Animal spleen
extracts are actually used as medicines.

• India has been exporting salted sheep casings to many developed countries like
Japan, Germany, Spain, Italy, Switzerland, Denmark etc. after due inspection from
Directorate of Marketing and Inspection under Animal Casings and Marking Rules,
1964.
• This is due to the fact that many countries are not able to meet their demand for
casings of small caliber. Dried cattle casings are exported mainly to Gulf countries.
• During 2000-01, India exported 574 tonnes of animal casings fetching Rs.12.30
crores.
• The country has exported 13,887.74 MT of animal casings to the world for the
worth of Rs. 416.54 Crores/ 56.23 USD Millions during the year 2020-21.

Dried and cleaned stomachs(abomasum)of young calves are sliced into
small pieces and then put into salt water or whey, together with some
vinegar or wine to lower the pH of the solution.
After some time (overnight or several days), the solution is filtered.

ADVANTAGES DERIVED FROM UTILIZATION OF SLAUGHTER HOUSE BYPRODUCTS ARE
AS FOLLOWS:
1)IT PROTECTS THE ENVIRONMENT FROM POLLUTION: Hygienic disposal of
slaughter house byproducts checks the pollution.
2) IT ENSURES BETTER RETURNS TO THE LIVESTOCK PRODUCER: Production of
value added secondary byproducts will influence live stock pricing and livestock
farmer will be the ultimate beneficiary.
3)It helps in augmenting the supply of highly nutritive feed for more productive
livestock. Meat meal is very rich in protein whereas bone meal is a good source of
phosphorus.
4)IT HELPS IN SETTING UP SECONDARY RURAL INDUSTRIES: Small-scale industries
based on animal byproducts particularly tanning, glue, soap, brushes, pet foods, stock feed,
fertilizers etc. can be set up.
5) IT CAN GENERATE LOT OF NEW EMPLOYMENT: Conversion of principal byproducts
into value added secondary byproducts is a cumbersome process and it has enormous
employment potential.
6) IT CAN INCREASE THE CROP PRODUCTION :Very simple equipment can be fabricated
to convert raw and cheap inedible buffalo into fertilizer rich in nitrogen, calcium,
phosphorus etc. Additionally, methane can be produced for use in lighting and heating.
Several requirements for profitable processing of byproducts
 Proper treatment and efficient utilization of slaughter house offals ,waste and
animal by-products respectively are the need of the hour since these have direct
impact on the economy and environmental pollution of the world.
 Efficient utilization of slaughter house byproducts will lead to the production
many valuable products, useful for animal feed, industries, human feed,
agriculture etc along with increasing the income of entrepreneurs and farmers.

  • 2. INTRODUCTION  Meat sector in India plays an important role in providing livelihood to rural people in the country. Animal slaughtering not only provides meat but also valuable byproducts to the mankind.  Meat industry can be made more competitive if byproducts are effectively utilized.  It has been estimated that sale of byproducts such as skin ,pluck ,head ,gut etc. can recover about 30% and 35% of the live animal prices of goat and sheep respectively.
  • 3. Offal, also called variety meats, any of various nonmuscular parts of the carcasses of beef and veal, mutton and lamb, and pork, which are either consumed directly as food or used in the production of other foods  In nutritional terms, several variety meats are richer in certain vitamins, minerals, and forms of protein than muscle tissue e.g= calf’s liver, is a major dietary source of iron, What is Offal means?

ADVANTAGES DERIVED FROM UTILIZATION OF SLAUGHTER HOUSE BYPRODUCTS ARE AS FOLLOWS: 1)IT PROTECTS THE ENVIRONMENT FROM POLLUTION: Hygienic disposal of slaughter house byproducts checks the pollution. 2) IT ENSURES BETTER RETURNS TO THE LIVESTOCK PRODUCER: Production of value added secondary byproducts will influence live stock pricing and livestock farmer will be the ultimate beneficiary. 3)It helps in augmenting the supply of highly nutritive feed for more productive livestock. Meat meal is very rich in protein whereas bone meal is a good source of phosphorus.
  • 40. 4)IT HELPS IN SETTING UP SECONDARY RURAL INDUSTRIES: Small-scale industries based on animal byproducts particularly tanning, glue, soap, brushes, pet foods, stock feed, fertilizers etc. can be set up. 5) IT CAN GENERATE LOT OF NEW EMPLOYMENT: Conversion of principal byproducts into value added secondary byproducts is a cumbersome process and it has enormous employment potential. 6) IT CAN INCREASE THE CROP PRODUCTION :Very simple equipment can be fabricated to convert raw and cheap inedible buffalo into fertilizer rich in nitrogen, calcium, phosphorus etc. Additionally, methane can be produced for use in lighting and heating. Several requirements for profitable processing of byproducts
  • 41.  Proper treatment and efficient utilization of slaughter house offals ,waste and animal by-products respectively are the need of the hour since these have direct impact on the economy and environmental pollution of the world.  Efficient utilization of slaughter house byproducts will lead to the production many valuable products, useful for animal feed, industries, human feed, agriculture etc along with increasing the income of entrepreneurs and farmers.
