Haisai Restaurant and Bakery is located in Singhamton and seats 28 guests inside and 16 on the patio. It is open three days a week for dining and the bakery operates five days a week. The restaurant concept is to create a natural atmosphere using furniture and decor made from locally foraged wood, clay, and shells.

1. Haisai Restaurant and Bakery Haisai means “sincere greeting” in Okinawan language. Michael Stadtlander’s Haisai seats 28 guests in the dining room and 16 on the patio. Haisai is open three days a week with the bakery operating five days a week.

Restaurant Concept / Inspiration All furniture hand built The wood used to build the furniture and to create the board and baton exterior were foraged by Michael and his apprentices on his farm and his friends forest. The clay used to cover the walls also came from the farms pond. The restaurant concept is to create a totally natural, yet exciting atmosphere for guests to enjoy food from the land. Michael credits nature and the forest as his inspiration.

Aspects of Service * Chef Stadtlander’s wife Nobuyo is in charge of the front of house and encourages friendly, attentive and professional service from her staff. * Service staff are semi-formally dressed, usually in black, but generally without any specific colours or styles. The staff are expected to be enthusiastic about serving the food and have an interested and genuine attitude towards work. .
