This document summarizes research on a gluten-free diet for celiac disease. It includes a literature review table summarizing sources from four team members on the emotional impact of celiac disease, the effectiveness of a gluten-free diet in reducing symptoms, cases where a gluten-free diet did not fully heal symptoms, and issues celiac patients face with lack of grains. It also includes an analysis of a gluten-free menu and works cited. The document concludes that following a gluten-free diet requires a major lifestyle change with little variety and expensive options, but it is relatively healthy if done correctly.
