The recent tumult in dairy markets represented
an existential threat. Collaboration with a London

It took the vision of someone from outside the industry to help

IS A FESTIVAL A GOOD IDEA ON YOUR FARM?
AQUAPONICS: THE
FUTURE OF FARMINGThe pros and cons of
running a festival on
your farm: is this a
good idea?
Bioaqua Farm is the first commercial
aquaponic farm in the UK
growing fruit, vegetables and
rearing rainbow trout in the most
sustainable and innovative way in
their biosymbiotic system.
Antonio Paladino, co-founder and
creator of their unique hybrid system,
will explore how aquaponics works and
the benefits of this application. Come
and find out why it plays a part in the
future of farming.
ANTONIO PALADINOBEN LEEKE OWNER & MD, CAPABILITY EVENTS
BIOAQUA FARM
ABOUT THE SPEAKER
Despite hearing all the problems
relating to ostrich production at
farm level, Fiona started to farm
ostriches in 1995 on a small scale
to gain a better understanding
of where the problems lay. With
South Africa’s key focus being
on leather supply to exclusive
markets, there was a lack of will
to produce ostrich on an industrial
scale for meat production. With
this attitude, Fiona couldn’t see a
future in South Africa and returned
to Europe to work more closely
with Stan Stewart to support
development of high production
projects.
ABOUT THE SPEAKER
Ben Leeke is the MD of Capability Events Ltd, which
runs private, corporate, and public events and festivals.
He started his own festival in the summer of 2015.
ABOUT THE SPEAKER
Antonio Paladino is co-founder
of Bioaqua Farm and the brains
behind the system. He runs
regular courses at the farm and
consults in aquaponics. Antonio
comes from a farming and lake
fishing region in the North of
Italy where he trained as a chef
to then build a career in London,
working in five star hotels
and fine dining restaurants to
private event catering, including
members the Royal Family and
top celebrities. Sixteen years
later, his mission for fresher high
quality ingredients sustainably
farmed drove him to build the
biggest aquaponic trout farm in
Europe to date, creating a unique
business model that includes
selling the freshest local veg and
gourmet food, to education and
consultancy on how to build and
manage your own aquaponic
farm. He’s since gained attention
globally and from media
including the BBC.

THOMAS BOURNE WELL HUNG MEAT COMPANY
ABOUT THE
SPEAKER
After seven years as a
commercial lawyer, Thomas
Bourne saw the light and
joined the world of farming
and farm diversification.
He spent two years as
managing director of the
Well Hung Meat Company,
building it up from its
base as a small meat box
home delivery service
(direct to consumer) to a
larger and more resilient
meat processing business.
Tom continues to work
with Well Hung Meat, and
also consults on business
development for Holy
Cow (organic dairy brand)
as well as a large organic
dairy farming group which
produces 10 million litres/
year from its five West
Country herds.
ABOUT THE SPEAKER
Although his family had been farming tenants of the Duchy of Cornwall for five
generations, Andy decided to follow a career with the Milk Marketing Board instead.
However, newly married to his ski instructor Tish, they decided to do a “real job” and take
over the family tenanted dairy farm in Somerset. They “played” at farm retailing for 10
years before opening Farrington’s in 2001, adding a café two years later. The dairy herd
were sold in 2006 to provide more parking, an outdoor play park, rented retail units, and
finally a play barn with an approved-status kitchen.
Building a sustainable business in a
competitive and fragmented marketplace
can be difficult, particularly in a
highly regulated sector such as food in
which the competition is big, bold and has
deep pockets.
Thomas, who is leading the Well Hung Meat
Company into new channels, will outline his
experience of swimming against the tide and
shares insights into what’s required to create
a resilient farm diversification business against
the odds.

DR PAUL THOMAS
WILLIAM WATKINS
MYCORRHIZAL SYSTEMS LTD
RADNOR HILLS
ABOUT THE SPEAKER
Dr Paul Thomas submitted his PhD on signalling systems in plants at the University of Sheffield in
2004. In 2004/2005, Dr Thomas received a small grant from the White Rose Centre for Enterprise
(WRCE) to commercialise the technology. WRCE put Dr Thomas forward for the first series of the
Dragons’ Den, in which a deal was initially accepted with Simon Woodroffe (£75,000 for 25% of
the business). However, after filming, Dr Thomas decided that the investment wasn’t right for him
and his business but after turning down the offer he continued to build Mycorrhizal Systems Ltd
into the global company it is today.
ABOUT THE SPEAKER
William Watkins read Agriculture
and Food Marketing at Newcastle
University. When he left in 1988,
he returned to his family farm in
mid Wales, but after 12 months
farming he decided to diversify
the farming business by packing
mineral water into cuplets for
the airline industry. After selling
cups to airline caterers from the
back of his car for two years, in
1995 he put his first bottling line
in.  Radnor Hills now produces
250 million bottles per year and
has increased its potential capacity
to 300 million bottles per year. It
employs 190 people, producing
and selling a wide range of water,
soft drinks, and juices. William still
has extensive farming interests as
well as having further diversified
into the hotel industry.
During his 30 minutes, William
will tell his story of how Radnor
Hills turned a traditional farming
business producing sheep, cattle,
and cereals into one producing
water, tonics, and juices. William
will discuss some of the greatest
challenges and ups and downs
of that journey, creating a
manufacturing business in a very
rural setting.

let a good idea slide, Francesca’s inherent love of good food and drink, combined with her outright

Join Francesca as she talks about the inception and
making of Dandylion Teas, and provides you with

FOR INSULATED PACKAGING
Ray looks at the development
potential of agricultural land and how
promotion agreements can work to
your benefit in realising value whilst
minimising your cost and risk.
This presentation addresses compelling
environmental and commercial
arguments against the widespread use

alternative manufactured from a genuinely
sustainable, compostable, and recyclable
material – wool, a superior natural insulator.

FOOD LABELLING, NUTRITION, AND
HEALTH CLAIMS: MARKET YOUR
MERITS
Everyone in the food industry needs to comply
with and be accountable for food labelling and
nutrition and health claims regulations.
These regulations are designed to expose the truth

local credentials they can help you showcase your
nutritional attributes and enable you to target the
market these most apply to.

Liz works closely within the food and
health industry, working to improve
or develop healthier products for the
consumer or customise for specific

SUCCESSFUL
DIVERSIFICATION:
A JOURNEY
GLAMPING BUSINESS
MODELS - WHICH ONE
MIGHT SUIT YOU?
Knowing where to start on the
diversification journey can be daunting.
The content of the seminar will highlight the
tools and services that are available to help
with the process. Reference will be made to
the journey that one landowner embarked
upon to convert an area of boggy woodland
into a thriving wedding venue. Based upon
a real life example of diversification, Chris
will highlight the various techniques that are
available to help the landowner identify the
potential of their asset.
Several glamping business models have
recently developed worldwide to provide a
variety of experiences for guests.
Kate provides an overview of some of these
options, from a single unit right through to resort
development, outlining what each one offers to
guests and requires from you. Kate wants to hear
about which business model suits you and your
existing or proposed land or business - so bring
your imagination, questions, and plans!

advantages and often see diversification

DIVERSIFICATION OF

BEYOND THE COUNTRY HOUSE:
OPPORTUNITIES OUTSIDE THE MAIN HOUSE?
MAKING MONEY
FROM WEDDINGS
For some property owners, the
thought of converting their home to
an ‘all-inclusive’ wedding venue and
taking on all the responsibility that
entails is just too daunting.
There are, however, small steps that
can be taken to get you on the path
to profitability in the wedding sector.
JASON THAWLEY
SIMON FOSTER
ISABEL SMITH

SAVILLS
ISABEL SMITH WEDDING CONSULTING
ABOUT THE SPEAKER
Jason specialises in sustainable
product design and efficient,
environmentally-led manufacturing;
his passion for English woodlands
has led him into woodland
architecture and the creation of
Tree Tents International Ltd. With
20 years of experience, he is an
ideas-led, award winning industrial
designer and mechanical engineer
across many fields.
ABOUT THE SPEAKER
With 10 years of experience,
Isabel is proud to operate the
first management consultancy
aimed exclusively at the wedding
industry, offering unique guidance
to her clients regarding product
development, venue restoration
and refurbishment, marketing
strategy and implementation,
sales training, recruitment, and
business planning.
It is often not practical to offer use of the
country house for tourism or event use. It
may be too small or precious.
Sometimes commercial use is not possible or
desirable alongside family occupation. In this
seminar, Simon explores the pros and cons of
other commercial opportunities outside the
house – from outdoor events, holiday cottages,
glamping, and filming and weddings in
marquees or converted outbuildings.
ABOUT THE SPEAKER
Before joining Savills to set up a
Commercial Heritage department,
Simon was instrumental in building an
events programme at Eastnor Castle
and encouraging the organisers of The
Big Chill festival to move their event
to Eastnor in 2003, where it grew
from a 5,000 to 40,000 ticket event.
Isabel will offer insight
into different business
models as well as top
tips to making additional
wedding revenue from
your existing clients.

COST 2 BUILD UK

ONE NIGHT
STAND
CONNECTED THINKING
ABOUT THE SPEAKER
Before becomming managing
director of Cost2Build in the
early part of 2014, Scott became
disillusioned with the way
the industry was going, and
how both the public and the
tradespeople were being treated,
creating the company to adress this.
ABOUT THE SPEAKER
Peter Bell BA MA PDD IHBC trained
in architecture. He worked with
English Heritage (now Historic
England) on the national resurvey
of listed buildings in the 1980s
before becoming a local authority
conservation officer. He now
provides professional support to
members of the Listed Property
Owners Club, writes on heritage
conservation issues, and is heritage
adviser with Asset Heritage
Consulting.
ABOUT THE SPEAKER
After being approached by a
glamping manufacturer to help
create an investment model, Nick
soon discovered the frustrations
that faced site owners looking for
finance to grow their business.
Having been glamping personally
since 2007 with his family, Nick
saw an opportunity and stepped
down from his investment business
and started One Night Stand.
ABOUT THE SPEAKER
Anne Clarke has worked in the
equestrian sector for 16 years,
spanning PR and marketing,
sponsorship, event management,
and bid writing. She has worked
for the British Equestrian
Federation, running the Hoof
Network, a 2012 Legacy project
to support businesses operating
in the sector. Anne’s passion
for protecting equestrianism
at grassroots led her to set up
Connected Thinking.
I’ve found that most
site owners I speak to
can fill another 10-20
rooms each season
but just can’t get or
just don’t have the
huge capital needed,
its very frustrating
for them. I thought,
people lease cars all
the time, why cant
they lease Glamping
Pods too?

FoodTheatre THOMAS BOURNE WELL HUNG MEAT COMPANY ABOUT THE SPEAKER After seven years as a commercial lawyer, Thomas Bourne saw the light and joined the world of farming and farm diversification. He spent two years as managing director of the Well Hung Meat Company, building it up from its base as a small meat box home delivery service (direct to consumer) to a larger and more resilient meat processing business. Tom continues to work with Well Hung Meat, and also consults on business development for Holy Cow (organic dairy brand) as well as a large organic dairy farming group which produces 10 million litres/ year from its five West Country herds. ABOUT THE SPEAKER Although his family had been farming tenants of the Duchy of Cornwall for five generations, Andy decided to follow a career with the Milk Marketing Board instead. However, newly married to his ski instructor Tish, they decided to do a “real job” and take over the family tenanted dairy farm in Somerset. They “played” at farm retailing for 10 years before opening Farrington’s in 2001, adding a café two years later. The dairy herd were sold in 2006 to provide more parking, an outdoor play park, rented retail units, and finally a play barn with an approved-status kitchen. Building a sustainable business in a competitive and fragmented marketplace can be difficult, particularly in a highly regulated sector such as food in which the competition is big, bold and has deep pockets. Thomas, who is leading the Well Hung Meat Company into new channels, will outline his experience of swimming against the tide and shares insights into what’s required to create a resilient farm diversification business against the odds. WHAT MAKES MEAT LIKE NO OTHER? DR PAUL THOMAS WILLIAM WATKINS MYCORRHIZAL SYSTEMS LTD RADNOR HILLS ABOUT THE SPEAKER Dr Paul Thomas submitted his PhD on signalling systems in plants at the University of Sheffield in 2004. In 2004/2005, Dr Thomas received a small grant from the White Rose Centre for Enterprise (WRCE) to commercialise the technology. WRCE put Dr Thomas forward for the first series of the Dragons’ Den, in which a deal was initially accepted with Simon Woodroffe (£75,000 for 25% of the business). However, after filming, Dr Thomas decided that the investment wasn’t right for him and his business but after turning down the offer he continued to build Mycorrhizal Systems Ltd into the global company it is today. ABOUT THE SPEAKER William Watkins read Agriculture and Food Marketing at Newcastle University. When he left in 1988, he returned to his family farm in mid Wales, but after 12 months farming he decided to diversify the farming business by packing mineral water into cuplets for the airline industry. After selling cups to airline caterers from the back of his car for two years, in 1995 he put his first bottling line in.  Radnor Hills now produces 250 million bottles per year and has increased its potential capacity to 300 million bottles per year. It employs 190 people, producing and selling a wide range of water, soft drinks, and juices. William still has extensive farming interests as well as having further diversified into the hotel industry. During his 30 minutes, William will tell his story of how Radnor Hills turned a traditional farming business producing sheep, cattle, and cereals into one producing water, tonics, and juices. William will discuss some of the greatest challenges and ups and downs of that journey, creating a manufacturing business in a very rural setting. MAKING MONEY FROM WEDDINGS For some property owners, the thought of converting their home to an ‘all-inclusive’ wedding venue and taking on all the responsibility that entails is just too daunting. There are, however, small steps that can be taken to get you on the path to profitability in the wedding sector. JASON THAWLEY SIMON FOSTER ISABEL SMITH TREE TENTS INTERNATIONAL SAVILLS ISABEL SMITH WEDDING CONSULTING ABOUT THE SPEAKER Jason specialises in sustainable product design and efficient, environmentally-led manufacturing; his passion for English woodlands has led him into woodland architecture and the creation of Tree Tents International Ltd. With 20 years of experience, he is an ideas-led, award winning industrial designer and mechanical engineer across many fields. ABOUT THE SPEAKER With 10 years of experience, Isabel is proud to operate the first management consultancy aimed exclusively at the wedding industry, offering unique guidance to her clients regarding product development, venue restoration and refurbishment, marketing strategy and implementation, sales training, recruitment, and business planning. It is often not practical to offer use of the country house for tourism or event use. It may be too small or precious. Sometimes commercial use is not possible or desirable alongside family occupation. In this seminar, Simon explores the pros and cons of other commercial opportunities outside the house – from outdoor events, holiday cottages, glamping, and filming and weddings in marquees or converted outbuildings. ABOUT THE SPEAKER Before joining Savills to set up a Commercial Heritage department, Simon was instrumental in building an events programme at Eastnor Castle and encouraging the organisers of The Big Chill festival to move their event to Eastnor in 2003, where it grew from a 5,000 to 40,000 ticket event. SCOTT GALLOWAY ANNE CLARKE PETER BELL NICK FEENEY COST 2 BUILD UK THE LISTED PROPERTY OWNERS CLUB ONE NIGHT STAND CONNECTED THINKING ABOUT THE SPEAKER Before becomming managing director of Cost2Build in the early part of 2014, Scott became disillusioned with the way the industry was going, and how both the public and the tradespeople were being treated, creating the company to adress this. ABOUT THE SPEAKER Peter Bell BA MA PDD IHBC trained in architecture. He worked with English Heritage (now Historic England) on the national resurvey of listed buildings in the 1980s before becoming a local authority conservation officer. He now provides professional support to members of the Listed Property Owners Club, writes on heritage conservation issues, and is heritage adviser with Asset Heritage Consulting. ABOUT THE SPEAKER After being approached by a glamping manufacturer to help create an investment model, Nick soon discovered the frustrations that faced site owners looking for finance to grow their business. Having been glamping personally since 2007 with his family, Nick saw an opportunity and stepped down from his investment business and started One Night Stand. ABOUT THE SPEAKER Anne Clarke has worked in the equestrian sector for 16 years, spanning PR and marketing, sponsorship, event management, and bid writing. She has worked for the British Equestrian Federation, running the Hoof Network, a 2012 Legacy project to support businesses operating in the sector. Anne’s passion for protecting equestrianism at grassroots led her to set up Connected Thinking. I’ve found that most site owners I speak to can fill another 10-20 rooms each season but just can’t get or just don’t have the huge capital needed, its very frustrating for them. I thought, people lease cars all the time, why cant they lease Glamping Pods too? THURSDAY | 11.45 | BRITISH TIPI THEATRE 4 ALSO SPEAKING: THURSDAY THEATRE 6 AT 14.45 29
