Fanesca is a traditional Ecuadorian soup eaten during Holy Week to commemorate Jesus and the twelve apostles. It contains twelve types of beans and grains representing the apostles, as well as figleaf gourd, pumpkin, and bacalao. The soup is typically served with hard boiled eggs, fried plantains, herbs, and sometimes empanadas. Fanesca is considered the largest meal of the day in Ecuadorian culture and is eaten at midday during Holy Week celebrations to honor family and religious traditions.
