DEFRA
In 2004 Netcen was asked to produce a report on behalf of the Department for
Environment, Food and Rural Affairs on Guidance on the Control of Odour and
Noise from Commercial Kitchen Exhaust Systems and in January 2005 the DEFRA
Guide was published.
Keeping the Kitchens Open
Councils up and down the country have powers under the Environmental
Protection Act 1990 to ensure that commercial kitchens comply with the DEFRA
Guide and that is where Purified Air comes in, ensuring that the extract from
commercial kitchens, when finally exhausted, is as clean and odourless as it
possibly can be, keeping the kitchens open and their neighbours happy.

Airius Destratification Fans
Airius destratification fans (or destrat fans) are the most versatile and
efficient destratification fans available. They work alongside all new and
existing heating and cooling systems to ensure temperatures provided by
heating and/or cooling are circulated fully and maintained more efficiently
throughout internal spaces.
Airius destrat fans prevent hot air from rising and accumulating at the ceiling by recirculating it down to floor level
where it is needed. They also prevent cool air from becoming trapped in low points or in poorly circulated areas,
thus creating a much more comfortable and controllable environment. It does this by constantly circulating and
mixing the internal air until temperatures are balanced and equalised between the floor and ceiling – thermal
destratification. This lessens the workload required from your heating and cooling system significantly, resulting in
a highly reduced operating time. This is where your energy savings are achieved.
The reduced energy requirement also means that you are lowering
your carbon footprint significantly, so much so that destratification is
recommended by the Carbon Trust as one of its top 3 carbon saving measures
(see here), making it an efficient and cost effective CRC solution.

Kitchen Fire Suppression Systems
Sales & Service
ANSUL products protect more food service kitchens from fire than any other brand. The R-102 Fire Suppression
System incorporates a flexible design with an extremely effective Low pH Liquid Agent. This agent quickly knocks
down flames and cools hot surfaces, while generating a tough vapor securing blanket that helps prevent re-flash.
The system is designed to protect areas
associated with ventilating equipment, including
hoods, ducts, plenums, and filters. It also
protects auxiliary grease extraction equipment
and cooking equipment such as various types
of fryers, griddles, range tops, broilers, char-
broilers and woks. The system is ideally suited
for commercial kitchens in fast food chains, retail
food courts, diners, convenience stores, catering

10. Kitchen Extraction Ductwork
Grease Extract Ventilation Cleaning
The greatest potential fire risk in buildings with catering facilities
comes from the accumulation of grease-laden deposits in extract
ventilation systems, a fire authority representative has warned
at an industry seminar recently. Grease extract ductwork often
stretches through the entire length of a building reaching to
a roof level exhaust, so uncleaned ductwork can put not only
the occupants at risk from fire but also the whole premises.
Although filters in canopies help trap some grease particles it is
inevitable that some grease-laden air will pass through, allowing
grease deposits to cool and settle on the internal surfaces of the
ductwork. Apart from the fire risk, the accumulation of grease
in the kitchen extract system reduces ventilation efficiency by
restricting the movement of extracted air, resulting in over-
heating, excessive humidity, possible failure to remove noxious
fumes from gas-burning appliances and a continuing source of
unwanted odours which can permeate the rest of the building.
The Fire Safety Order requires owners and managers of buildings to ensure the Grease Extract Ventilation
System is included in the Fire Risk Assessment and action taken to eliminate any potential risk to building
occupants from potentially fire hazardous grease deposits in the ducting.
