companies in Malaysia are poised to register a steady growth in the next 5 years by 25% in also
driven by high demand for frozen food product such frozen curry puff.

-For market share, every sales that we get example in one month we get RM 30,000 from every
branch, so from that sales we will divide the number of our sales for industry to increase
productivity for frozen food and from this way, many investor from international will have
interest to invest in our frozen food.
Sales forecast:
-Based on global demand on frozen food, sales for frozen food will increase year by year
because nowadays people are more likely to eat fast-food more than cooking by itself. This
happen when, people don’t have enough time to spent for cooking and just eat frozen food or
instant food that fast and easy to cook.

Introduction
- Operation unit is one of the most important parts in the business organization because the
through the operations of its product it will lead to a business growth. From this operation of our
business company, we can also maximize the profit gain.
All activities in this operation will be done according to plan so that it will meet with our
customer’s expectation. In this term of office, we are ensuring that the production of our table
will be produced continuously to fulfil the increasing demand from public.
In the operation unit, we applied a systematic technique and management in order to ensure that
the business will be more efficient and effective in producing table. Therefore, it can fulfil the
demand for customers’ needs and wants by providing the best services to them and indirectly the
business can gain the optimum profit.
Operation Planning:
With the application of high technology machineries and equipment, the business can produce a
large scale of production by which the production cost will also be reduced and the product will
be more competitive as compare to other product. Besides having similar functions with other
competitors’ tables, we also had improved and put additional function to our table to make it as
an alternative way to help people to do their work easily and efficiently.

is a town and capital of Batu Pahat District, Johor Malaysia.Batu Pahat is 20th largest urban area
in Malaysia in terms of population. As for the racial demography, Chinese make up the majority
of population at 62 % followed by Malay 36% and Indians 2%.

Main purpose:
Frozen food preserves it from the time it is prepared to the time it is eaten. Since early times,
farmers, fishermen, and trappers have preserved grains and produce in unheated buildings during
the winter season. Freezing food slows down decomposition by turning residual moisture into
ice, inhibiting the growth of most bacterial species. In the food commodity industry, there are
two processes: mechanical and cryogenic (or flash freezing). The freezing kinetics is important
to preserve the food quality and texture. Quicker freezing generates smaller ice crystals and
maintains cellular structure. Cryogenic freezing is the quickest freezing technology available due
to the ultra-low liquid nitrogen temperature −196 °C (−320 °F).
Project improvement/ mitigation:
Freezing is one of the most widespread used preservation methods for meats including fish meat.
Traditional freezing methods such as air blast freezing and cryogenic freezing could induce some
quality deterioration such as damage to cell structure, increased drip loss, and poor sensory
value. Therefore, novel freezing methods have been developed to minimize the disadvantages of
traditional freezing methods. This review describes the enhancement of quality attributes of
muscle tissues frozen by novel freezing technologies, including high pressure freezing,
electrically and magnetically assisted freezing, ultrasound assisted freezing and antifreeze
protein. These quality attributes include microstructure, moisture loss, color, tenderness, protein
denaturation, lipid and protein oxidation, and microbial counts. In this review, the principles of
these emerging freezing technologies are introduced, and the impacts of these technologies on
controlling the formation and growth of ice crystals and on complex changes of protein are also
discussed. The current review shows that the novel freezing methods have positive effects on
promoting the quality of frozen muscle. At a micro level, the majority of the novel methods have
some certain ability on controlling the formation and growth of ice crystals, thus creating
smaller, and more homogeneous and regular distribution of ice crystals, leading to better
microstructure and enhanced quality attributes of frozen meats. Meanwhile, complex changes of
protein take place under some of these novel freezing processes, and therefore the possible
negative effect of the changes of protein should also be considered for commercial applications
of these technologies in the frozen food industry.

Poor colour and flavour, rancidity, inedible pre-cooked dinners, and even mild turned the
consumer away from frozen foods as fresh and canned goods became more available.

Conclusions:
Frozen food products have significant market share. The growth of the frozen food industry is
influenced by socioeconomic changes and technological developments. One of the main
advantages of freezing preservation is the convenience and ease of food preservation with
minimal impact on food quality compared to other preservation techniques (e.g., thermal
processing or drying). Like any other preservation technique, freezing affects the quality of food
products. However, the advancement in freezing technology and adoption of novel techniques
can reduce the impact of freezing on food quality and nutrition. Application of novel processing
techniques and use of edible coating/films will result in higher-quality frozen products with
extended shelf life. The future commercial application of novel processing techniques, such as
high pressure and power ultrasound-assisted freezing will depend on the development of
commercial scale equipment that is easy to operate and economically viable.

Since early times, farmers, fishermen, and trappers have preserved grains and produce in unheated buildings during the winter season. Freezing food slows down decomposition by turning residual moisture into ice, inhibiting the growth of most bacterial species. In the food commodity industry, there are two processes: mechanical and cryogenic (or flash freezing). The freezing kinetics is important to preserve the food quality and texture. Quicker freezing generates smaller ice crystals and maintains cellular structure. Cryogenic freezing is the quickest freezing technology available due to the ultra-low liquid nitrogen temperature −196 °C (−320 °F). Project improvement/ mitigation: Freezing is one of the most widespread used preservation methods for meats including fish meat. Traditional freezing methods such as air blast freezing and cryogenic freezing could induce some quality deterioration such as damage to cell structure, increased drip loss, and poor sensory value. Therefore, novel freezing methods have been developed to minimize the disadvantages of

This review describes the enhancement of quality attributes of muscle tissues frozen by novel freezing technologies, including high pressure freezing, electrically and magnetically assisted freezing, ultrasound assisted freezing and antifreeze protein. These quality attributes include microstructure, moisture loss, color, tenderness, protein denaturation, lipid and protein oxidation, and microbial counts. In this review, the principles of these emerging freezing technologies are introduced, and the impacts of these technologies on controlling the formation and growth of ice crystals and on complex changes of protein are also discussed. The current review shows that the novel freezing methods have positive effects on promoting the quality of frozen muscle. At a micro level, the majority of the novel methods have some certain ability on controlling the formation and growth of ice crystals, thus creating smaller, and more homogeneous and regular distribution of ice crystals, leading to better microstructure and enhanced quality attributes of frozen meats. Meanwhile, complex changes of protein take place under some of these novel freezing processes, and therefore the possible negative effect of the changes of protein should also be considered for commercial applications of these technologies in the frozen food industry.   • 28. Conclusions: Frozen food products have significant market share. The growth of the frozen food industry is influenced by socioeconomic changes and technological developments. One of the main advantages of freezing preservation is the convenience and ease of food preservation with minimal impact on food quality compared to other preservation techniques (e.g., thermal processing or drying). Like any other preservation technique, freezing affects the quality of food products. However, the advancement in freezing technology and adoption of novel techniques can reduce the impact of freezing on food quality and nutrition. Application of novel processing techniques and use of edible coating/films will result in higher-quality frozen products with extended shelf life. The future commercial application of novel processing techniques, such as high pressure and power ultrasound-assisted freezing will depend on the development of commercial scale equipment that is easy to operate and economically viable.
