Assessment
The students will apply the knowledge about
the topic history of cookies, characteristics,
and categories through a “SONG”. The
students will insert and free to choose any kind
of song that will fit all the important key words
on the topic. The students will be evaluated
using a scoring rubric?5 minutes preparation.
SAFETY PRECAUTIONS
1. Use PPE before the entire
laboratory.
2. Proper hygiene and
sanitation
3. Mis en place
Ingredients of Yeast dough bread (Soft Roll)
500 grams Bread Flour
10 grams yeast
100 grams sugar + 5g to feed the yeast
260 ml lukewarm water
30 grams 5 grams salt
1 pc egg
50 grams shortening
Procedure
1. Prepare all the materials, the
tools and equipment.
2. Measure all the ingredients first
before the entire process.
Procedure
3.Dissolve the yeast in luke warm
water and add sugar then mix.
4.Add all the ingredients in a mixing
bowl except for salt and shortening.
Procedure
5. Knead dough with shortening till
gluten develop check elasticity.
6. Ferment for 30 minutes till double
size.
Procedure
7. Punch down to release air.
8. Scale and round the dough to 70
grams.
9. Final rising for 20-30 minutes
10. Then open your oven for 200-
250 degree Celsius.
