This document describes CHOOZIT® AMERI-FLEX, a one-bag direct to vat culture system for producing American style cheeses like cheddar, colby, and Monterey jack. It offers two formulations to provide flexibility for different processing conditions. 1. Flexible starter culture system for consistent
performance, vat to vat
Producers of American style cheeses often need to manage production complexity to
satisfy a wide range of desired customer demands. This might mean making cheddar in
the morning, colby in the afternoon and Monterey jack in the evening, all while seeking to
maximize cheese yield and functionality.
Introducing CHOOZIT® AMERI-FLEX, for American style cheese, including cheddar,
colby, and jack. CHOOZIT® AMERI-FLEX is a one-bag direct to vat culture system. The
convenient single pouch blend of fast acidifying mesophilic and thermophilic strains is
formulated for reliability, dependability, and phage robustness. Two robust formulations
in this range are designed to provide flexibility for producing American cheese types in
multiple processing conditions. CHOOZIT® AMERI-FLEX provides consistent and
dependable acidification from vat to vat, day to day.

2. Higher productivity with flexibility
The CHOOZIT® AMERI-FLEX series is available in two easy to use frozen pellet formulations that can be tailored for a cheesemaker’s individual needs.
The 2000 DCU offering has been formulated to give suitable control of acidification in higher moisture cheeses with the flexibility to be used in industrial
cheddar process.
The 1500 DCU was formulated for fast acidification in a high efficiency industrial cheese manufacturing setting with fill, set and cheddarization time
constraints.
