The need for clean labels, fresh ingredients and immunity-boosting products is escalating. Bridging provision of nutritious and clean foods is the key to strengthening food security. Here is where food fortification plays a huge role. Food fortification is the process of adding essential micronutrients (vitamins, minerals, trace elements) to food to make up for the nutrients that are absent or not present in significant amounts keeping in mind that the risk to one’s health is minimal. However, the focus is now shifting to one of the most clean food-based strategies that springs off but differs from conventional food fortification, known as food-to-food fortification (FtFF).
What is food-to-food fortification?
According to Kruger et al., food-to-food fortification is the addition of micronutrients-dense food(s) to a recipe (household level) or food formulation (food industry level) or the replacement of micronutrient- poor/antinutrient-rich ingredients, to substantially increase the amount of bioavailable micronutrients(s), with the aim of improving the micronutrient status of populations where the intake of bioavailable micronutrients is inadequate. In simpler words, taking an already micronutrient dense food and adding it to a staple food (vehicle) will provide a final product with highly bioavailable nutrient rich food. It is different from conventional fortification. In conventional fortification, the addition of a particular ingredient or a premix of micronutrients results in the increase in micronutrient content and bioavailability. However, in FtFF, the micronutrients are added via a food naturally rich in that micronutrient. There are certain substances in these fortifiers such as organic acids that act as natural enhancers in elevating the bioavailability of the micronutrient of interest. Food-to-food fortification offers benefits and constraints which need to be well understood before integrating it into any strategy. 1. NEW INNOVATIONS NEED A GREEN
LIGHT FOR SUSTAINABILITY
A new DuPont Nutrition & Health scoring model will rate how product development
projects contribute to the UN Sustainable Development Goals
DuPont Nutrition & Health will accelerate sustainability in 2019 with the introduction of a new scoring system for
product development projects. The aim is to ensure all future ingredient solutions make a balanced contribution to
the planet, people and profits.
Currently under test, the Sustainable Innovation Scoring Model is part of the journey towards embedding the UN
Sustainable Development Goals (SDG) in all aspects of the business.
“We have focused on lifecycle assessments of existing products for many years to determine their environmental
footprint. Now we want to be more upfront and proactive by making sure that sustainability has high priority and
visibility in new product development projects,” says Mikkel Thrane, Global Sustainability Lead.
Angela Naef, Global Technology & Innovation Leader adds: “Including sustainability as a key selection criterion
for evaluating new product development ideas will help focus our creativity on the critically important SDGs and
ensure we constantly improve our portfolio to help our customers solve global challenges”
Sustainability in the supply chain
Projects will be scored for their sustainability impact on the DuPont supply chain, on customer supply chains and
on consumer health.
In the DuPont supply chain, a positive impact could relate to the sustainable sourcing of raw materials or a low
carbon footprint in production. Customer supply chains, on the other hand, may benefit from ingredient solutions
that reduce food waste, replace animal protein with plant protein, or enable the production of ambient products
with no cooling requirement during transport and storage.
Consumer health comes first
Most of all, the scoring model will emphasise a project’s expected contribution to consumer health.
“SDG no. 3 highlights health and well-being as an important focus area. Our contribution could be, for example, to
facilitate the reduction of sugar, salt or trans fats or to create solutions for adding plant protein, fiber or probiotics –
improving the overall nutritional profile of a food product,” Thrane says.
The sustainability score will be one of the factors used in determining whether a proposed product development
project should be pursued.
When the Sustainable Innovation Scoring Model is introduced in 2019, another initiative will start the process of
mapping the sustainability of the current DuPont Nutrition & Health portfolio.
