Over the last 15+ years I have been working in the food, beverage, and hospitality industry as a working Restaurant Consultant, Kitchen Manager, Head Chef,
Executive Chef, and Executive Sous Chef. With a combined total of over 22 years in the industry, with 15+ as a working chef, I have the abilities and leadership to
conquer any culinary situation.
I have an extensive culinary history cooking for people from GA Governor Zell Miller, recent GA Governor Sonny Perdue, Several NC and IL Senators, including
Senator John Snow, and Senator Tucker. Also former Presidents and First ladies of Jimmy Carter, Ronald Reagan, and George Bush Sr. My food has also graced
the lips of Dolly Parton, Reba Macintyre, Carlos Santana and the Santana band, Waylon Jennings, and Travis Tritt.
I've also earned a 4 1/2 star review from Food Beverage and Hospitality Magazine, while at the Watercrest at the Fieldstone Resort under Executive Chef Daniel F.
Baker.
Working in the field of this industry as a manager/consultant has given me a huge perspective, and professional understanding of the quality concerns and needs of
today’s restaurant owners and partners. Using the direct hands on approach with all aspects of food production, training, and running a large or even a small kitchen
with different department staff, and even culinary students, has come to me naturally. I had my start in management starting in my teens with the Texaco Corporation,
opening the first co-op Diary Queen Texaco in the United States, and becoming Assistant Head Manager at 17.
Being a totally unaccredited and self taught Executive Chef, has allowed me to apply my own skills in American Italian, American, American S.W., Scottish, Irish,
Southern American, and dabbling in other areas as well, without being strapped down to a set learned style. Having not been formally trained has allowed me to
become a great chef, using skills compiled, and honed from many years of training, and experimentation. I'm a culinary artist, and totally original.
Highly skilled in all forms of ala carte line production, food ordering, inventory control, menu production/invention/costing, FOH/BOH employee skill training, customer
relations, and an abundance of cross training as a manager and chef has allowed me to have a great advantage in the industry. I found a notch in consulting and
restaurant problem turn around, using my leadership and drive to make changes in those around me.
I have a very high standard of professionalism and training resources that when introduced into a problem kitchen, or restaurant, is almost 100% effective in turn
around.
My skills, dependability, creativity, problem solving and knowledge have constantly been my number one assets. I am at heart an Executive Chef and very capable of
addressing and solving your restaurant needs.
