Vitamin A and
             Beta-Carotene
ā€¢ Also known as retinol, retinal, retinoic acid
ā€¢ Vitamin A is found in the body in compounds known as
retinoids: retinol, retinal, and retinoic acid.
ā€¢ These have functional roles in vision, healthy epithelial
  cells, and growth.
ā€¢ Vitamin A deficiency is a major health problem in the
  world.
ā€¢ Toxicity is often associated with abuse of supplements.
ā€¢ Plant foods provide carotenoids, such as beta-carotene,
some of which have vitamin A activity.
ā€¢ Animal foods provide compounds that are easily
  converted to retinol.
ā€¢ Retinol binding protein (RBP) allows vitamin A to be
  transported throughout the body.

         Beta-Carotene
ā€¢ Roles in the Body
  ļƒ¼Vitamin A in Vision
ā€¢ Helps to maintain the cornea
ā€¢ Conversion of light energy into nerve
      impulses at the retina
    ā€¢ Rhodopsin is a light-sensitive pigment of
the retina that contains a protein called
      opsin.

Vitamin A and
         Beta-Carotene
ā€¢ Roles in the Body
ļƒ¼Vitamin A in Protein Synthesis and
   Cell Differentiation
ā€¢ Through cell differentiation, vitamin A
allows cells to perform specific functions.
    ā€¢ Epithelial cells
ā€“ Epithelial tissues on the outside of the body
         form the skin.
ā€“ Epithelial tissues on the inside of the body
         form the mucous membranes.

     ā€¢ Sperm development in men
ā€¢ Normal fetal development in women
     ā€¢ Growth in children
ā€¢ Remodeling of the bone involves osteclasts,
         osteoblasts, and lysosomes.
ā€“ Osteoclasts are cells that destroy bone growth.
ā€“ Osteoblasts are cells that build bones.
ā€“ Lysosomes are sacs of degradative enzymes that
            destroy bones.

Vitamin A and
           Beta-Carotene
ā€¢ Vitamin A Deficiency
ļƒ¼ Because vitamin A is stored in the body, it
would take a year or more to develop a
deficiency in the presence of inadequate
    intake.
  ļƒ¼ Infectious Diseases
ā€¢ Impaired immunity correlates with vitamin A
       deficiency in children.
ā€¢ The goals of worldwide health organizations
       include vitamin A supplementation.
  ļƒ¼ Night Blindness
ā€¢ First detectable sign of vitamin A deficiency
ā€¢ Inability to see in dim light or inability to recover
sight after a flash of bright light

  ļƒ¼ Blindness
ā€¢ Xerophthalmia is blindness due to vitamin A
       deficiency.
ā€¢ Xerosis is the first stage where the cornea
       becomes dry and hard.
ā€¢ Keratomalacia is the softening of the cornea.
  ļƒ¼ Keratinization
ā€¢ Epithelial cells secrete a protein called keratinā€”
the hard, inflexible protein of hair and nails.
ā€¢ Changes in epithelial cells results in
keratinization, rough, dry and scaly skin.
ļƒ¼ Deficiency disease is called hypovitaminosis

ļƒ¼ Can occur with concentrated amounts of the
preformed vitamin A from animal foods,
    fortified foods, or supplements.
ļƒ¼ Consuming excessive amounts of beta-
carotene from supplements can be harmful.
  ļƒ¼ Bone Defects
ā€¢ Increased activity of osteoclasts causes weakened
bones and contributes to osteoporosis and
       fractures.

Antioxidant Nutrients in
    Disease Prevention
ā€¢ Oxidants are compounds in the body
  that oxidize other compounds.
ā€¢ Antioxidants have a role in
  preventing oxidation, and thus assist
in the prevention of chronic disease.
ā€¢ Researchers and medical experts are
still clarifying the roles of these
  nutrients in relationship to health
  and disease.

              Ā© 2009 Cengage - Wadsworth
Free Radicals and Disease
ā€¢ Produced by normal body processes and
  environmental factors such as ultraviolet
light, air pollution and tobacco smoke
ā€¢ Free radicals are highly unstable due to
  unpaired electrons and are often
  damaging.
ā€¢ Antioxidants stabilize free radicals and
  protect against oxidative stress.
ā€¢ Cognitive performance, aging, cancer,
arthritis, cataracts and heart disease may
  be protected with antioxidants.

                 Ā© 2009 Cengage - Wadsworth
Ā© 2009 Cengage - Wadsworth
Defending against Free
         Radicals
ā€¢ Limiting free radical formation
ā€¢ Destroying free radicals or their
  precursors
ā€¢ Stimulating antioxidant enzyme
  activity
ā€¢ Repairing oxidative damage
ā€¢ Stimulating repair enzyme activity

              Ā© 2009 Cengage - Wadsworth
Defending against Cancer

ā€¢ Antioxidants may protect DNA.
ā€¢ Fruits and vegetables have
antioxidants such as vitamin C and
  beta-carotene.

              Ā© 2009 Cengage - Wadsworth
Defending against Heart
         Disease
ā€¢ Fruits and vegetables strengthen
  antioxidant defenses against LDL
  oxidation.
ā€¢ Vitamin E defends against LDL
  oxidation, inflammations, arterial
  injuries and blood clotting.
ā€¢ Vitamin C may protect against LDL
  oxidation, raises HDL, lowers total
  cholesterol and improves blood
  pressure.

              Ā© 2009 Cengage - Wadsworth

    smoking to prevent disease.

                  Ā© 2009 Cengage - Wadsworth
Food, Supplements, or
          Both?
ā€¢ Supplements
ļƒ¼Not enough data to confirm benefits
   of supplements only
  ļƒ¼Contents of supplements are limiting
ļƒ¼Still need research to define optimum
   and dangerous levels with
   supplements
ļƒ¼At high levels, supplements may act
   as prooxidants.

              Ā© 2009 Cengage - Wadsworth

  • 1. Chapter 11 The Fat-Soluble Vitamins: A, D, E, and K Ā© 2009 Cengage - Wadsworth
  • 2. Vitamin A and Beta-Carotene ā€¢ Also known as retinol, retinal, retinoic acid ā€¢ Vitamin A is found in the body in compounds known as retinoids: retinol, retinal, and retinoic acid. ā€¢ These have functional roles in vision, healthy epithelial cells, and growth. ā€¢ Vitamin A deficiency is a major health problem in the world. ā€¢ Toxicity is often associated with abuse of supplements. ā€¢ Plant foods provide carotenoids, such as beta-carotene, some of which have vitamin A activity. ā€¢ Animal foods provide compounds that are easily converted to retinol. ā€¢ Retinol binding protein (RBP) allows vitamin A to be transported throughout the body.
