While Carnaval has religious origins, in Ecuador it is typically celebrated differently in coastal areas, where people play with water, compared to the capital, where there are parades with people in costumes. A typical food enjoyed during Carnaval is ceviche made with shrimp or fish cured in lemon juice and served with corn.
