1. Broccoli Thoran (Stir-frytype food)
Ingredients
1. Broccoli Florets – separated from 1 big bunch of Broccoli
2. Diced Onions – 1 small or Diced Shallots – 1/4 cup
3. Finely Minced Garlic – 1 tbsp
4. Oil – 2 tbsp
5. Grated Coconut – 1/2 cup
6. Turmeric Powder – 1/4 tsp (Optional)
7. Red Chili Powder – 1/4 tsp
8. Cumin Powder- 1/4 tsp (Optional)
9. Salt – to taste
Preparation Method
1. Wash and drain well. Separate the florets from the stem.
2. If you are using the stems, peel the outer thick layer and dice the inner soft flesh. You can dice the florets
and stemusing a food processoror pulse it in a mixie. Keep stem and florets separate
3. Heat oil in a nonstickpan.
4. Sauté onions/shallots.
5. Add 1 tbsp.of finely minced garlic and stir fry for a minute.
6. Reduce heat and add 1/4 tsp turmeric powder, 1/4 tsp red chilly powder and 1/4 tsp cumin powder.
7. Add the stempart and cook for 2 min. Add the floret and coconut powder.
8. Cover and cook the broccoli on medium-low heat for around 5 minutes stirring occasionally.
9. Open lid and stir fry for a minute or two until the thoran is dry.
Note: Taste of this food changes with sautéing time, spices added or the size of broccoli added. Remember
taste is depended on the grain size.
If you dice the broccoli into very small pieces, it will cook in around 5 minutes.
If you are using bigger pieces of broccoli, increase the cooking time accordingly.
