1. Blue Cheese and Figs in Endive Spears
(makes approx. 20)
8 oz Cream Cheese,softened
4 oz Blue cheese,softened
2 Tbsp Cream
1 Jar Fig Preserves
2 Tbsp Port
2 Belgian Endive, leaves separated
¼ Cup Finely Chopped Walnuts
Place first 5 ingredients into food processorand processuntil
well combined. Add additional cream if needed to get desired
consistency.
Spoonor pipe 1 tablespoonof cheese mixture into bottom of
each leaf. Sprinkle with nuts, arrange on serving plate and
serve at room temperature.
Chef Notes: lovely options might include
- add ½ tsp of fresh rosemary needles to the cheese mixture before processing.
- Do not add the figs to the cheese mixture. Instead, place a ½ tsp on top of the
cheese in each spear. Then top with nuts.
- Add a sprig of herbs to garnish each spear.
