FYI, I met my beautiful wife exactly 22 years ago on the first night of the first Jazz Festival up here. Sweet music, indeed! No matter what you are enjoying during the summer, it seems hearts are more open at this time of year. It is the time for community gatherings, from neighbourhood street parties to more intimate backyard and patio BBQs. RECIPE OF THE MONTH: SUMMER PUDDING
Ingredients: ·sliced white bread ·1 pkg. frozen berries ·1 T sugar per cup of fruit ·whipping cream mixed with ½ tsp. vanilla Instructions: · Mix together the first 3 ingredients and leave for 5-10 min. If you are using defrosted fruit, tip in some of the juice too. · Line a 1.2 litre bowl with cling wrap, leaving an overhang. Cut a circle of bread to fit the base. Quarter the rest. · Drain juice from the soaked fruit into a bowl, and dip in the bread until soaked. · Layer the fruit and bread, pouring over the remaining juices, and cover with the overhanging cling wrap. Weigh down with a small plate and a couple of cans. · Chill in the fridge for 2 hours or until ready to eat. · Serve with whipped cream. When using fresh berries, add 1 T sugar to each cup of fruit and put in a pot. Simmer for 3 min. Let cool
